When my son can’t find something, we always call on my husband. We frequently have missing Lego person cases where I have absolutely no idea where to look or what I am even looking for! The other day our son took a handful of Lego guys in the car, which is like the point of no return. We have no idea how he does it, but the guys and their accessories can never be found when we get home and get out of the car.
There was a recent panic attack because his Lego guys had fallen to their despair in between the seats. We thought he found everything until we got into the house and he realized hair for one of his Lego guys was still missing. So, back out my husband went and after a lengthy search he saved the day and found the hair! He & I got a good laugh out of the situation – we never imagined our world’s would come to a screeching halt over Lego hair!

What You’ll Need for the Crust:
- 3 cups Flour
- 1 cup Sugar
- 1 tsp Baking Powder
- 1 cup Salted Butter, Softened
- 1 Egg
And the Strawberries & Cream Filling:
- 8 oz Cream Cheese, Softened
- 1/2 cup Sugar
- 1/2 tsp Vanilla
- 1 (21 oz) can Strawberry Pie Filling

How to Make Strawberries & Cream Crumb Bars
- Preheat the oven to 375 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
- In a medium size bowl, mix the 3 cups flour, 1 cup sugar, and 1 tsp baking powder together. Then add 1 cup softened salted butter and mix together until you have crumbs. Add in 1 egg and mix until you have large crumbs. (This may take a few minutes.)
- Press 2/3 of the mixture evenly onto the bottom of the prepared pan. Bake for 8-10 minutes. (The crust should be matte, not shiny, and starting to lightly brown.) Allow to cool slightly.
- In a medium size bowl, beat together 8 oz softened cream cheese, 1/2 cup sugar, and 1/2 tsp vanilla extract. Drop small dollops over the crust and spread evenly. (It’s okay if the cream cheese sinks into the crust a little, just use small dollops and gently spread.)
- Then dollop 1 21 oz can of strawberry pie filling over the cream cheese mixture and spread evenly.
- Crumble the remaining crust over the top of the strawberry pie filling and bake for another 20-25 minutes. The top should be lightly browned. Allow to cool before cutting and serving.

Recipe Notes & Substitutions:
- Cream cheese layer – Be sure to drop small dollops of the cream cheese mixture onto the crust, not big ones. The mixture will sink into the crust layer, and that’s okay. Smoothing small dollops out will give you a nice distinct layer of cream cheese filling.
- Filling – You can use any pie filling flavor in this recipe, such as:
- Blueberry
- Cherry
- Peach
