Vegan Chocolate Peanut Butter Pretzel Bites

These Vegan Chocolate Peanut Butter Pretzel Bites are one of our favorite treats! I don’t make them often because they are super high in everything I shouldn’t be eating, so I make them when I am sharing them with a crowd. That way I am just eating a few instead of all of them! 

 

My husband is a City Bus driver – a hot one at that! I never thought a man in a bus uniform kissing me good-bye in the morning could give me goosebumps, but it does! There is just something about the way he puts his strong arm around my waste and pulls me in for a kiss that just makes me feel safe.

 

I love him.

 

And because I love him, I made these treats for him to take to the guys at work. You see, the shop guys at his work tell him to keep the treats coming and they’ll keep his bus a priority! A few weeks ago as my husband was requesting the shop guys to fix something on his bus, one of the guys put his arm around my husband and committed to taking the best care of his bus as long as he kept bringing in treats!

 

Sweet treats are my favorite thing to make! All I need is a crowd to give them to and I’ll whip up a batch of whatever sounds good at the time.

 

These Vegan Chocolate Peanut Butter Pretzel Bites sounded really good, so I made them for my hubby to take to work.

 

Lay out your pretzels.

 

 

Mix highly addictive, delicious tasting, can’t stop eating goop according the recipe.

 

 

Roll into small balls and place onto the pretzels. Press down with another pretzel, making a sandwich. (Test your goop by rolling it into a ball first, before placing it onto a pretzel. If it’s too soft and sticky it needs more powder sugar. Keep adding a little more powder sugar and mixing until the consistency easily rolls into a ball without sticking to your fingers.)

 

 

Then dunk half of each pretzel bite into melted Enjoy Life Vegan Chocolate Chips.

 

 

I don’t mind trying new vegan recipes, but often times they require specialty ingredients and additional time. I find that the most successful vegan recipes I have are what I call swaps. All I do is take a tried and true recipe of mine and swap it with a substitute ingredient.

 

For example, the only ingredient in this recipe that needed to be swapped was the chocolate and it’s vegan! I find that approach to be the easiest and quickest, and it still tastes great!

 

 

 

 

As they were cooling in the refrigerator, my husband would walk over every couple of minutes to grab one. He took them to work the next day and two guys ate the entire container, minus two. They left two for my husband! It’s nearly impossible to stop eating these!

Vegan Chocolate Peanut Butter Pretzel Bites

Ingredients

  • 1 cup Creamy Peanut Butter
  • 2 tbsp Earth Balance Vegan Butter, Softened
  • 1/2 cup Powdered Sugar
  • 3/4 cup Brown Sugar
  • 1 bag Enjoy Life Vegan Chocolate Chips

Instructions

  1. Line a baking sheet with parchment paper and line with pretzels. 

  2. Beat peanut butter and butter until combined. Add sugars and beat until combined. (You should be able to roll the mixture into balls without it sticking to your hands. If it's sticky, add more powdered sugar until the consistency is easy to roll.)

  3. Roll mixture into small balls and place balls on the pretzels. Press additional pretzels onto the balls, sandwiching the mixture. 

  4. Melt the chocolate. Dip each pretzel bite halfway into the melted chocolate and place onto lined baking sheet. 

  5. Chill in refrigerator until the chocolate is firm.
