Thick and Chewy Monster Cookie Bars
Last year I tried making Monster Cookie Bars, except I used a different recipe and I made the mistake of putting the Reese’s Peanut Butter Cups in the cookie dough before baking instead of after. Remaking them wasn’t a priority, so this year I thought I would try again except I decided to use my Easy Carmelita Bar recipe instead. I was really happy with the way they turned out this time!
These are so easy to make! They are thick, chewy, spooky, and ooey-gooey – perfect for Halloween!
What You’ll Need:
- 1 (30 oz) roll of Refrigerated Chocolate Chip Cookie Dough
- 1 (11 oz) bag of Kraft Caramels
- 1/4 cup Evaporated Milk
- 1 cup Milk Chocolate Chips
- Halloween Sprinkles
- Reese’s Franken-Cups
- Wilton Candy Eyes
How to Make Monster Cookie Bars
- Preheat oven to 350 degrees.
- Using your fingers, evenly press a little more than half of the roll of cookie dough into the bottom of a 9 x 13 pan.
- Bake for 20 minutes.
- While baking, unwrap an 11 oz bag of caramels and place into a sauce pan. Pour 1/4 cup evaporated milk over the caramels and melt over low heat, stirring constantly.
- When the 20 minutes are up, remove the pan from the oven and sprinkle 1 cup milk chocolate chips over the cookie dough.
- Then pour the melted caramel over the chocolate chips evenly.
- Crumble the remaining cookie dough over the top of the caramel.
- Return the pan to the oven and bake for another 12-15 minutes, or until golden brown.
- Let cool for 5 minutes.
- If using sprinkles, sprinkle around on the top of the cookie dough. Then randomly press Reese’s Franken-Cups into the dough lightly, green side up. Decorate with Wilton eyes as you wish!
Recipe Notes:
- Caramel – I recommend using Kraft caramels, they melt and set the best!
- Cookie dough – Don’t overthink putting on the top layer of cookie dough. Just sprinkle it around, it doesn’t have be perfect distributed. It will bake out flat into the caramel.
- Sprinkles – You don’t have to use the sprinkles, they are optional! If you do use them, any sprinkles will work! Make sure to do this first, before pressing in the Reese’s Franken Cups. If you do it after, they will stick to the warm candy.
- Candy – You can use any Halloween candy decorate with! Just let them be after you have placed them into the cookie dough and set the eyes on them. The candy will be very soft and warm. Touching them any more than you have to will make the candy loose it’s form.
- Eyes – You don’t need to ‘glue’ them on in any way. Setting them into the cookie dough will keep them in place. And once you set them on the candy, they will stay in place from the melted chocolate hardening.
