Moist Chocolate Banana Muffins
I love muffins. They are neighborly. Is that weird? I feel like they can say, “I’m thinking of you,” “Welcome to the neighborhood,” “I’m sorry for what you are going through,” “I love you,” or “Everything will somehow be okay.”
They almost always require ingredients we already have in our pantry, they are easy enough for kids to make, they work for picnics, breakfast, lunches, or potlucks, they travel well, and freeze nicely. I just love making them!
These Chocolate Banana Muffins just happen to use up overripe bananas, which is a chronic problem of mine. And they are bursting with chocolate in every bite!
You’ll have to make some of my other favorite muffins, like the Best Strawberry Muffins, Banana Chocolate Chip Muffins, the Best Blueberry Muffins, and Cinnamon Sugar Donut Muffins!
What You’ll Need:
- 1 3/4 cup Flour
- 1/2 cup Cocoa Powder
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 cup Oil
- 1/2 cup Milk
- 2 Eggs
- 1 tsp Vanilla
- 1/2 cup Sugar
- 1/4 cup Brown Sugar
- 1 cup Mashed Banana
- 1 cup Chocolate Chips
How to Make Chocolate Banana Muffins
- Preheat the oven to 350 degrees.
- Line a muffin pan with liners.
- In a small bowl, whisk together 1 3/4 cup flour, 1/2 cup cocoa powder, 1 tsp baking powder, and 1/2 tsp baking soda.
- In a large bowl, whisk together 1/2 cup oil, 1/2 cup milk, 2 eggs, 1 tsp vanilla, 1/2 cup sugar, 1/4 cup brown sugar, and 1 cup mashed banana.
- Add dry mixture to the wet and stir in 1 cup chocolate chips.
- Divide batter evenly between the 12 muffin liners. Sprinkle additional chocolate chips on the tops of the muffin batter.
- Bake for 21 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Recipe Notes:
- Freezing – These freeze nicely. Just let them completely cool and freeze in a freezer safe bag.
