Easy Peppermint Fudge
My blog server recently ran out of storage. I had to decide whether to compress my images further, making them smaller to free up more space, OR buy more storage.
I decided to compress my images. Although it’s time consuming, buying more storage is expensive. I started the automated process to start making my pictures smaller and after about 2,500 pictures in (I currently have about 6,280 pictures on the blog) I realized it was making the clarity of my pictures blurry. I was loosing the clean look I have worked so hard to brand!
Thankfully, the company that manages the server my blog is hosted on was able to act quickly and reverse the damage. What a relief!

What You’ll Need:
- 1 (14 oz) can Sweetened Condensed Milk
- 1 cup Ghirardelli Milk Chocolate Chips
- 1 cup Ghirardelli White Chocolate Chips
- 1/2 tsp Vanilla
- 1/4 tsp Peppermint Extract
- 1/3 cup Crushed Candy Canes
How to Make Peppermint Bark Fudge
- Line an 8 x 8 pan with aluminum foil and spray with non-stick spray.
- Divide 1 (14 oz) can sweetened condensed milk between two separate small sauce pans. (It should measure out to just over 1/2 cup in each pan.)
- Add 1 cup Ghirardelli milk chocolate chips in one pan and 1 cup Ghirardelli white chocolate chips to the other.
- First melt milk chocolate over low heat, stirring constantly until completely melted. Remove from heat and stir in 1/2 tsp vanilla.
- Immediately spread into prepared pan. Let harden.
- Then melt white chocolate over low heat, stirring constantly until completely melted. Remove from heat and stir in 1/4 tsp peppermint extract.
- Then stir in 1/4 cup crushed candy cane and immediately spread over hardened milk chocolate layer.
- Sprinkle remaining crushed candy cane pieces over the top.
- Allow fudge to harden before cutting.
