Vegan Banana Chocolate Chip Muffins
I feel so bad for the bananas that come into my house. They basically go there to die. It’s so sad! But don’t worry, I take pity on them and turn them into delicious things like these Banana Chocolate Chip Muffins! On the rare occasion when we eat them before they go brown, we have fun with them and turn them into Peanut Butter & Jelly Hot Dog’s!

What You’ll Need:
- 1 2/3 cup Flour
- 1/2 cup Sugar
- 1 tsp Baking Soda
- 1/3 cup Oil
- 1/3 cup Almond Milk
- 1 tsp Vanilla Extract
- 3 Bananas, Mashed
- 3/4 cup Peanut Butter
- 1 cup Vegan Chocolate Chips

How to Make Banana Chocolate Chip Muffins
- Preheat oven to 350 degrees. Line a muffin pan with wrappers and set aside.
- Mix together 1 2/3 cup flour, 1/2 cup sugar, and 1 tsp baking soda.
- Stir in 1/3 cup oil, 1/3 cup almond milk, and 1 tsp vanilla. Mix in 3 mashed bananas and 3/4 cup peanut butter.
- Add in 1 cup vegan chocolate chips and mix until well combined.
- Divide batter evenly between the 12 muffin cups and bake for 22 minutes, or until a toothpick inserted into the center of the muffin comes out clean.

Tips:
- Milk – You can use soy milk in this recipe as well, or you can swap for regular milk.
- Chocolate chips – You can use regular chocolate chips instead if you’d like.
- Storing – After the muffins are cooled, you can store them in an air tight container. For best taste, the muffins should be eaten within 1-3 days.
- Freezing – Once they are completely cooled, individually wrap the muffins in plastic wrap and place them in a freezer safe bag.
