Easy Vegan Brownies with Oil
I never understood why there was a ‘tax season’ before I was self-employed. Now I get it.
I pay estimated taxes every quarter. The amount I pay is based on a guess. Yep, a guess. So, when I file my yearly taxes I have to guess how much I will make in the coming year. Then I pay in based on that guess.
Here’s the thing – if my guess is too far off, I could be penalized up to $1,000. Additionally, if I’ve made more than what I estimated, I have to pay more in taxes than I expected. Thankfully I have an Accountant who helps me adjust accordingly each quarter, because I am not qualified to get all of this right!
It gets better. I get paid once a month, at the beginning of every month. That paycheck is from what I earned 2 months prior to the month I actually receive the money. For example, when I get paid in April, it will be earnings from January. Trying to estimate what I will make versus what I’ll receive is literally impossible. I keep a spreadsheet and guess based on history and trends.
Not to mention, my income is from ads. If there is a shift in our economy that affects what companies are willing to pay for advertising, there is an increase or decrease in how much I get paid per 1,000 clicks. The way I earn income is riskier than investing in the stock market!
Even though I keep track of everything across a multitude of spreadsheets, I still feel very stressed and nervous during tax season. It doesn’t matter how much I set aside, it doesn’t matter how much I plan ahead… I still have to be prepared for the unexpected.
I feel like these Homemade Vegan Brownies are the only way to cope with such a overwhelming undertaking! Actually, these should probably be shared with my Accountant. Poor guy! HA!

What You’ll Need:
- 2 cups Flour
- 2 cups Sugar
- 3/4 cup Cocoa Powder
- 1 tsp Baking Powder
- 3/4 tsp Salt
- 1 cup Hot Water
- 1/2 cup Oil
- 2 tsp Vanilla

How to Make Homemade Vegan Brownies
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
- In a large bowl, whisk together 2 cups flour, 2 cups sugar, 3/4 cup cocoa powder, 1 tsp baking powder, and 3/4 tsp salt.
- Pour in 1 cup hot water, 1/2 cup oil, and 2 tsp vanilla and mix together until well combined.
- Spread evenly into the prepared pan.
- Bake for 30 minutes. The top should no longer be shiny and the center should feel just set when gently pressed.
- Let cool for 10 minutes before cutting.
