The Best Cheesecake Brownies
If you’ve ever had Black Bottom Cupcakes, then you have an idea of how mouth watering deliciously addicting these Cheesecake Brownies are! They taste just like them, but in brownie form. These are so amazing there are not enough descriptive words to describe how fantastic they are!
I cut these into bite size pieces to make these stretch farther to give as gifts over the holidays. Having these in snack form is just about the worst idea I’ve ever had! It’s impossible to stop popping them in your mouth!

What You’ll Need for the Brownies:
- 1 (12 oz) bag Chocolate Chips
- 6 tbsp Butter
- 3/4 cup Sugar
- 1 tsp Vanilla
- 3 Eggs
- 1/4 cup Cocoa Powder
- 1/3 cup Cornstarch
- 1 cup Mini Chocolate Chips
And the Cheesecake Layer:
- 1 (8 oz) Cream Cheese, Softened
- 1/2 cup Sugar
- 1 Egg
- 1/2 tsp Vanilla
How to Make Cheesecake Brownies
- Preheat oven to 350 degrees.
- Spray a 9 x 9 pan with non-stick spray and set aside.
- In a medium size bowl, combine 1 (12 oz) bag chocolate chips and 6 tbsp butter. Melt in the microwave in 30 second intervals, stirring between intervals, until smooth and melted.
- Stir in 3/4 cup sugar and 1 tsp vanilla until combined.
- Whisk in 3 eggs, one at a time, stirring between each one.
- In a small bowl, whisk together 1/4 cup cocoa powder and 1/3 cup cornstarch. Pour into the wet ingredients and stir until well combined.
- Then stir in 1 cup mini chocolate chips.
- Pour 2/3 of the brownie batter into the prepared pan evenly.
- Then make the cheesecake mixture by beating 1 (8 oz) softened cream cheese in a medium size bowl until fluffy.
- Add in 1/2 cup sugar and beat until combined.
- Beat in 1 egg and 1/2 tsp vanilla.
- Spoon the mixture over the brownie batter and carefully spread into a thin layer.
- Spoon remaining brownie batter over the top.
- Bake for 30 minutes. A toothpick inserted into the center should come out clean.
- Let cool completely in the pan.
