My go-to Easy Chocolate Chip Banana Bread recipe is so, so good! But this recipe for Vegan Chocolate Banana Bread is decadent! It is so chocolatey and fudgy in every single bite!
For some reason, it seems like only a short time goes by after setting bananas on my counter top and I am looking for ways to use them up! The fastest way to deal with them is to freeze them for another day to make Blueberry Kale Smoothie’s. But when I have more time, I like to make Banana Crumb Cake, Vegan Peanut Butter Banana Brownies, or Vegan Banana Chocolate Chip Muffins!
What You’ll Need:
- 2 cups Overripe Bananas, Mashed
- 2 1/2 tsp Vanilla
- 1 tbsp Lemon Juice
- 1/4 cup Oil
- 2/3 cup Maple Syrup
- 1/4 cup Sugar
- 1 3/4 cup Flour
- 1 tsp baking Soda
- 3/4 tsp Salt
- 1/2 cup + 2 tbsp Cocoa Powder
- 1 cup Mini Vegan Chocolate Chips
How to Make Vegan Chocolate Banana Bread
- Preheat oven to 350 degrees. Spray a 9 x 5 loaf pan with non-stick spray and set aside.
- In a large bowl, whisk together 2 cups mashed overripe bananas, 2 1/2 tsp vanilla, 1 tbsp lemon juice, 1/4 cup oil, and 2/3 cup maple syrup.
- In a separate medium size bowl, mix together 1/4 cup sugar, 1 3/4 cup flour, 1 tsp baking soda, 3/4 tsp salt, 3/4 tsp baking powder, 1/2 cup + 2 tbsp cocoa powder, and 1 cup mini vegan chocolate chips.
- Pour the dry ingredients into the wet and stir until well combined.
- Transfer to the pan and spread evenly. Sprinkle additional mini vegan chocolate chips on the top of the dough.
- Bake for 75-80 minutes or until a toothpick inserted into the middle comes out clean.
Recipe Notes:
- Baking time – This is a pretty solid loaf of bread so it’s needs the full baking time and possibly more. Once you reach 70 minutes in the oven, start keeping an eye on it by inserting a toothpick into the middle of the loaf. It should come out clean when the bread is baked all the way through.
- Chocolate chips – You don’t have to use vegan chocolate chips, you can easily swap with milk chocolate chips!
- Peanut butter – If you like peanut butter and chocolate together, then spread a slice of this bread with peanut butter for a tasty treat!
