A delicious ooey-gooey vegan brownie that is loaded with peanut butter, chocolate, and bananas!

Fudgy Vegan Brownies
To make it look like rotting bananas on my counter is intentional, I turn them into things like these delicious Vegan Peanut Butter Banana Brownies. They are so easy to make my son can whip up a batch in just a few minutes! I confirm correct measurements and put them in the oven, but other than that he sees them through from start to finish. It’s fun to turn them into Brownie Bites, too!
Bananas just have this way of over ripening faster than we can get to them. Sometimes I freeze them to make a Peanut Butter Banana Spinach Smoothie, and sometimes I bake them into Peanut Butter Banana Baked Oatmeal Cups or a Banana Crumb Cake!

These healthy vegan brownies are easy to make because all you need is one bowl, a few common ingredients that you probably already have, and a taste for thick gooey-ooey brownies!
I know it’s a good recipe if my husband can’t resist them! We especially like them really cold, right out of the refrigerator.

What You’ll Need:
- 2 Over Ripe Bananas
- 1 cup Sugar
- 1/2 Vegan Butter, Melted
- 1 tsp Vanilla Extract
- 3/4 cup Flour
- 1/8 tsp Salt
- 1/4 cup Cocoa Powder
- 1/2 cup Creamy Peanut Butter

How to Make Vegan Peanut Butter Banana Brownies
- Preheat oven to 350 degrees.
- In a bowl, use a fork to mash 2 over ripe bananas. Add 1 cup sugar, 1/4 cup melted vegan butter, and 1 tsp vanilla extract. Whisk until combined.
- Add 3/4 cup flour, 1/8 tsp salt, and 1/4 cup cocoa powder. Whisk until well combined.
- Pour batter into greased 9 x 9 pan.
- Soften 1/2 cup peanut butter in the microwave in 5 second increments, stirring until softened. Use a spoon to add dollops of peanut butter on top of the batter. Using a butter knife, swirl the peanut butter into the brownie batter.
- Bake for 25 minutes.
- Allow bars to cool completely before cutting.

Recipe Notes:
- Butter – These don’t have to be made vegan, you can easily swap the vegan butter for real butter.
- Peanut Butter – If your peanut butter is too firm to swirl with a knife, soften it in the microwave for a few seconds. Start with 5 seconds and stir the peanut butter to check the consistency. Continue microwaving for a few seconds at a time until it’s soft enough to swirl.
- Dollops – You don’t have to measure out exactly 1/2 cup peanut butter to swirl into the brownies. It’s just a measurement to give you an idea of about how much you’ll need to use. Just put dollops of peanut butter all over the batter and swirl into the brownie batter until you think it looks like enough!
- Storing – My personal preference is to store these in the refrigerator, we love the taste of them cold! They also keep longer and fresher.
- Freezing – These freeze well in a freezer safe bag.
