It’s all over, I can’t seem to hide from it. I am seeking peace and comfort in God’s promises, found in the Bible. Just last night I was reminded that if we seek, we shall find. I am seeking for our world to turn their eyes on Jesus, so the things of this earth will grow strangely dim in the light of His glory and grace.
What You Need to Make Vegan Peanut Butter Cookies
- Flour
- Sugar
- Baking Soda
- Salt
- Peanut Butter
- Vegan Yogurt
- Vanilla Extract
How to Make Vegan Peanut Butter Cookies
- Combine 3 tbsp flour, 1/3 cup sugar, 3/4 tsp baking soda, and 1/8 tsp salt. Mix well.
- Add 1/2 cup melted creamy peanut butter, 2 tbsp vegan vanilla yogurt, and 1/2 tsp vanilla extract. Mix well, until cookie dough forms.
- Refrigerate cookie dough for 1 hour. (Optional)
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and place tbsp size balls of cookie dough evenly distributed on the parchment paper.
- Lightly place a fork on top of the cookie dough ball and press into the dough, leaving a fork mark. Repeat the opposite direction.
- Bake for 8 minutes.
- Let cool before removing from the cookie sheet.
Tips for Making Vegan Peanut Butter Cookies
- You can use crunchy peanut butter instead of creamy if you’d like!
- Melting the peanut butter makes it easier to stir and combine.
- The cookies will look underdone. They will continue to bake on the cookie sheet after you remove them from the oven.
- You don’t have to refrigerate the dough before baking. This step just helps make soft cookies.
