Lazy Buckeye Brownies
We were teased with an early Spring here in central Wisconsin. We had the windows open and it felt like pool days were right around the corner! I should have known it was too good to be true – we went back to Fall like temperatures and flurries. I feel like the only way to cope is by baking these Buckeye Brownies and keeping it easy by using a boxed brownie mix, of course.

What You’ll Need:
- 1 box Brownie Mix + Ingredients on Box
- 1/2 cup + 6 tbsp Butter, Softened
- 1/2 cup Creamy Peanut Butter
- 2 cups Powdered Sugar
- 2 tsp Milk
- 1 cup Chocolate Chips

How to Make Buckeye Brownies with Brownie Mix
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
- Make brownie mix according to directions. (I like to use the fudge brownie directions instead of the cake brownies, but either works.)
- Let cool.
- Beat together 1/2 cup softened butter, 1/2 cup creamy peanut butter, 2 cups powdered sugar, and 2 tsp milk until smooth and creamy.
- Spoon peanut butter mixture onto the cooled brownies and spread with your hand.
- In a separate bowl, combine 1 cup chocolate chips and 6 tbsp butter and microwave until melted, stopping every 15 seconds to stir.
- Pour over peanut butter mixture and spread out evenly. Let sit to harden.

Recipe Notes:
- Butter – I have tried using 1/4 cup butter instead of 6 tbsp butter for the top chocolate layer and it works and tastes great – but it doesn’t spread as nicely.
- Brownies – I like to use the fudge brownie directions instead of the cake brownies, but either works.
- Chocolate topping – It’s important to frequently stir the melted chocolate chips and butter together so it’s mixed really well together. Otherwise it separates and you’ll have a hard time stirring it to a nice, smooth consistency.
