These chewy, fudgy brownie cookies are super easy to make using a store bought brownie mix!
4-Ingredient Brownie Mix Cookies
We’ve had an itch to travel and explore lately. The past couple of weekends we’ve taken day trips to different towns not too far from home and we have found cute little restaurants that are new to us, stores we don’t usually get to shop at, and fun activities to do together like arcade games!
We like home, but we also like adventures. Taking day trips seems to be the perfect fit for us! That reminds me of these Brownie Mix Cookies. They taste like a traditional brownie, but in the shape of a cookie!

What You’ll Need:
- 1 box Brownie Mix
- 2 Eggs
- 1/2 cup Canola Oil
- 1 tbsp Water
How to Make Brownie Mix Cookies
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- In a large bowl, mix together 1 box brownie mix, 2 eggs, 1/2 cup canola oil, and 1 tbsp water.
- Cover dough and refrigerate for 30 minutes.
- Scoop 2 tbsp size cookie dough balls and place onto prepared baking sheet, leaving room between the cookies.
- Bake cookies for 10-12 minutes. Remove from oven and allow cookies to cool before transferring to a cooling rack.

Recipe Notes:
- Chilling the dough – You do not have to chill the dough. However, chilling it helps keep the dough from spreading too thin while baking. I return the dough to the refrigerator between baking batches of cookies.
- Chocolate chips – If you need an extra dose of chocolate, stir in some regular or mini size chocolate chips!
