Vegan Christmas Crack with Saltine Crackers
My Christmas Crack recipe is super popular. I wanted to know how it would taste if it was vegan, so I experimented with the recipe! It was super easy to swap ingredients because all I needed to do was use vegan butter instead of regular and vegan chocolate chips instead of milk chocolate chips.
The toffee texture is a little different than if you use regular butter, it’s softer and cracker like and less snappy like toffee but it passed my husband’s taste test!
I don’t have a lot of vegan Christmas recipes on the blog yet, I’m working on that, but you can easily veganize Caramel Crispix and Nutty Toffee Crackers for the holidays!
What You’ll Need:
- 40 Saltine Crackers
- 1 cup Vegan Salted Butter
- 1 cup Brown Sugar
- 2 cups Vegan Chocolate Chips
- Christmas Sprinkles
How to Make Vegan Christmas Crack
- Preheat oven to 400 degrees.
- Line a 10 x 15 baking sheet with aluminum foil and spray with non-stick spray.
- Place 40 crackers in a single layer on the baking sheet.
- Combine 1 cup vegan butter and 1 cup brown sugar in a saucepan, stirring frequently, and bring to a boil. Keep stirring continuously for 5 minutes after boil is reached.
- Pour the mixture over the crackers and spread evenly.
- Place the pan in the oven and bake for 5 minutes.
- Remove from the oven and let sit until the crackers settle, just a minute or two. Using a butter knife, push any crackers that are overlapping back into place. Then immediately sprinkle 2 cups vegan chocolate chips over the top.
- Let sit until you are able to spread the melted chocolate chips over the saltines.
- Sprinkle Christmas sprinkles on top and let toffee sit until cool.
- Cut or break into pieces to serve.
Recipe Notes:
- Make Ahead – You can easily make this ahead of time. Just store in a sealed container.
- Toffee Mixture – Be careful not to cook too long. It will burn and/or cool too hard.
- Toppings – You can swap out the sprinkles for any vegan candy you’d like!
