Best Chickpea Tuna Salad Recipe

What You’ll Need:
- 2 (15 oz) cans Chickpeas, Rinsed & Drained
- 1 Carrot, Shredded
- 2 stalks Celery, Finely Diced
- 1/2 small Red Onion, Finely Diced
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 cup Mayonnaise
How to Make Better Than Tuna Salad
- Mash 2 (15 oz) cans rinsed and drained chickpeas in a food processor.
- Transfer to a medium size bowl and combine with 1 shredded carrot, 2 finely diced celery stalks, 1/2 small red onion finely diced, 1/2 tsp salt, and 1/4 tsp black pepper.
- Add 1 cup mayonnaise and mix until well combined. (Add to desired texture of creaminess.)
Recipe Notes:
- Vegan – You can easily make this vegan by swapping the mayonnaise for vegan mayonnaise.
- Mayo – Use desired amount of mayonnaise to reach desired texture of creaminess.
- Garlic – For enhanced flavor, try adding garlic!
- Serving – You can serve this Better Than Tuna Salad in a pita shell, in a sandwich, or dunk crackers into it.
- Storing – Be sure to store in a sealed container in the refrigerator.
