A lightly sweetened and delicious vegan breakfast for on-the-go! These work great for meal prepping!

I had a rough day yesterday. A complete stranger undermined me as a parent and I am still reeling from anger and resentment. I am having such a hard time with it that I am even struggling with taking it to God in prayer. I am livid.
We were supposed to just drop a bag of stuff off at Goodwill, but the plan changed to going in and looking around. My son found a singing fish, to which I said, ‘No, we are not getting that.’ I went off to a different section and he and my husband stayed in the toy aisle. A short while later a complete stranger, who had overheard me tell my son ‘no,’ comes up to him with the singing fish in a Goodwill bag because she purchased it for him and tells him to, ‘Have fun and go annoy your mother with it.’
My level of anger is at the point that my teeth are hurting from clenching them for so long. I have taught my son to accept ‘no’ for an answer. That’s why he put it back on the shelf without a fuss. I would really like to find this lady and ask her what she was thinking. Clearly she is not a parent, or she is a terrible one because I can’t imagine what kind of a person does such a thing?!

I can’t even bring myself to assume positive intent because I know there is a war over our children, and it comes in many forms. We live in a society where pity is shown for a child processing the word ‘no’ instead of empathy, where wants are manipulated into needs, and where impulses are okay to follow because discipline and disappointment are ‘too hard.’ It’s all hogwash. I am not a perfect parent, there are some days I feel like a failure. But the one thing I try hard not to fail at is letting my son get what he wants after I have said, ‘No.’
I stay pretty quiet regarding hot topics, especially parenting. There are grey areas and I don’t want to come across as self-righteous. But I am making an exception this time because if I don’t furiously type to release my anger I am afraid I am going to explode!
About the only thing I can do to distract myself from over-reacting right now is to focus on the beauty of this melted peanut butter!

What You Need to Make Peanut Butter Banana Baked Oatmeal Cups
- Mashed Banana
- Peanut Butter
- Unsweetened Applesauce
- Maple Syrup
- Almond Milk
- Vanilla Extract
- Old Fashioned Rolled Oats
- Baking Powder
- Cinnamon
- Salt
- Vegan Chocolate Chips

How to Make Peanut Butter Banana Baked Oatmeal Cups
- Preheat the oven to 350 degrees. Line a muffin pan with muffin liners and lightly spray with non-stick spray.
- In a medium bowl, combine 1 mashed banana, 1/2 cup peanut butter, 1/2 cup unsweetened applesauce, 2 tbsp maple syrup, 2/3 cup almond milk, and 1 tsp vanilla extract.
- Stir in 2 cups old fashioned rolled oats, 1 tsp baking powder, 1 tsp cinnamon, and 1/4 tsp salt. Mix well.
- Then stir in 1/3 cup vegan chocolate chips.
- Divide batter evenly between muffin cups. Sprinkle a few extra chocolate chips on top. Bake for 20 minutes.
- Optional: Drizzle with peanut butter before serving.

Tips for Making Peanut Butter Banana Baked Oatmeal Cups
- Creamy or chunky peanut butter will work in this recipe.
- You don’t have to make this vegan, you can swap the applesauce for two eggs and the vegan chocolate chips with milk chocolate chips.
- The original recipe also suggested adding 1/3 cup chopped walnuts. (I prefer chopped pecans!)
- And you can freeze these on-the-go breakfast cups easily by letting them completely cool then placing in a freezer safe bag for up to 3 months.
