My husband is always on the prowl for chocolate. If he can’t find any, he’ll throw back a few chocolate chips just to get his fix! He loves his milk chocolate, so naturally it would seem he wouldn’t be satisfied with anything but that. But he loves these Vegan Chocolate Crunch Cups! Nobody can ever tell the difference with these, they don’t taste any different just because they are ‘vegan.’
As a matter of fact, every vegan recipe I make tastes ‘normal.’ That’s the whole idea! To be able to enjoy the food I love, just without dairy. You’ll see what I mean when you try this Vegan Blueberry Crisp, these Vegan Banana Chocolate Chip Muffins, or Cinnamon Roll Overnight Oats!
What You’ll Need:
- 1 1/2 cups Vegan Chocolate Chips
- 2 tsp Coconut Oil
- 3/4 cup Rice Krispies Cereal
How to Make Vegan Chocolate Crunch Cups
- Line a muffin pan with 12 cupcake liners.
- Stir 1 1/2 cups vegan chocolate chips and 2 tsp coconut oil together on low heat until melted.
- Remove from heat and stir in 3/4 cup Rice Krispies.
- Distribute mixture evenly into liners. Put in refrigerator until firm.
Recipe Notes:
- Storing – These keep well in a sealed container in the refrigerator and/or the counter.
- Freezing – You can also freeze them in a freezer safe bag.
- Add peanut butter – Melt in 1/3 cup peanut butter with melted chocolate and coconut oil. Add additional 1/4 cup Rice Krispies.
- Christmas candy – You can make these pretty by making them into Christmas Chocolate Crunch Cups!
