Vegan Blueberry Kale Smoothie
For a long time I heard, “Kale is really good for you! You should eat it!” And then I heard, try ‘hiding’ it in salads or turning it into chips. Um, no. Kale is gross, and there was no convincing me otherwise.
Until… I decided to not only lose weight, but completely overall my lifestyle and diet. It has taken me many, many months of tweaking old recipes and trying new ones. I’ve finally reached the point where I feel like I can actually sustain my new way of life because I’ve failed at it enough times to recognize success.
But how did I get here? How did I go from refusing to eat Kale to promoting it?
It all started with one choice at a time. I made up my mind that I was going to learn as much as I could about food and I was going to learn from those around me already living the lifestyle I wanted. I enjoy research, so I have a natural desire to dig into what I want to learn more about. It can be both a blessing and a curse, because sometimes it leads to being indecisive. But it can also lead into a solid belief system.
Through research, behavior modification, and trial & error, I have managed to permanently change the way I think. Looking back, I would have told you it’s literally impossible to change my lifestyle. Sure, for a few months I knew I could do it, but for over a year?! How did I get here?!
The answer? Again, one thing at a time – one choice at a time, one potluck at a time, one restaurant at a time, one new recipe at a time, one walk at a time, one prayer at a time. That’s how I did it. The hours turned to days, the days into weeks, the weeks into months, and here we are – a year later I am still free from the chains of a poor lifestyle.
Every day, except the days I’m not, I’m intentional about my choices. For a long time I have wanted to elaborate on that to include new recipes I’ve tried or created and how to live your life to the fullest without feeling like you are starving. But I’ve been scared to share them with you. I’m not a dietitian or nutritionist and I fear facing conflict over my path to better health.
Not only that, I’m not a weight loss or healthy lifestyle blogger. I am a food blogger who blogs about my first love – baking! And most of it isn’t healthy!
Over time I’ve been dismissing a nudge to share the steps to this success, fear wins every time. A new day starts and I feel that nudge again. It is constant interpersonal turmoil over something as simple as sharing what I’ve learned and how I maintain weight loss without going crazy.
Then I read this quote as I was reading our daily devotional out loud to my son this morning, “Decide that you want it more than you are afraid of it.”
I WANT to help you! So many people have asked me how I’ve lost so much weight and everyone has learned something new with my response! Note: There is no secret – it’s perspective, creativity, and effort.
I’ve done some of the hard stuff for you and can put easy, family-friendly, filling, and truly healthy Weight Loss Recipes in front of you to help relieve some of the burden! I’m not going to live in fear of the chance that some troll is going to stir up conflict over the definition of healthy anymore or accuse me of mixed messages because one day I’m sharing a recipe for Donut Strawberry Shortcake and the next a Blueberry Kale Smoothie!

What You’ll Need:
- 1 (14.5 oz) can Pears + Juice
- 1 cup Kale
- 1 Banana, Frozen
- 1 1/2 cups Blueberries, Frozen
How to Make a Blueberry Kale Smoothie
- Combine 1 can pears (including juice), 1 cup kale, 1 frozen banana, and 1 1/2 cups frozen blueberries into a blender and blend until smooth.
Recipe Notes:
- Pears – You can swap the canned pears for almond/soy milk.
- Honey – Sweeten with a little honey if you’d like, but make sure to try the smoothie first before you do. The pears naturally sweeten it!
