I feel like there is a stigma that comes with being vegan. Weird looks, like the raising of an eyebrow from a carnivore! The carnivores in my life have a lot of fun with my vegan way of life, insinuating I am high maintenance. I’ll give it to them, it does sound like a lot of work. But it’s really not!

I don’t want those who are not vegan to miss out on the opportunity of a great recipe just because it’s ‘vegan!’
As a matter of fact, most people like it better the vegan way! When you are baking you can easily substitute oil with applesauce and eggs for vegan vanilla yogurt. If you are nervous about the outcome, start with a boxed cake mix. Super easy. You’ll never go back to making it according to the box. Seriously, try it! It’s so moist and delicious, it makes you want to slow down and enjoy it – it’s that good!

What You Need to Make Vegan Hulk Spinach Banana Muffins
- Silk Vegan Vanilla Yogurt
- Oil
- Overripe Banana
- Vanilla Extract
- Spinach
- White Flour or Whole Wheat Flour
- Sugar or Honey
- Baking Powder
- Baking Soda
- Cinnamon
- Salt
How to Make Vegan Hulk Spinach Banana Muffins
- Preheat oven to 375 degrees. Line a muffin pan with liners, lightly spray the liners with non-stick spray and set aside.
- In a blender, combine 3/4 cup Silk vegan vanilla yogurt, 1/4 cup oil, 1 overripe banana, 2 tsp vanilla extract, and 6 oz packed spinach. Blend until smooth.
- In a separate bowl, combine 2 cups flour, 3/4 cup sugar, 3 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, and 1/2 tsp salt. Mix together until well combined.
- Pour the green batter into the dry ingredient mixture and mix just until well combined.
- Divide evenly between muffin liners and bake for 15-16 minutes or until an inserted toothpick from the center comes out clean.
Tips for Making & Storing Vegan Hulk Spinach Banana Muffins
- You can substitute the yogurt with Almond Breeze Unsweetened Vanilla Almond Milk.
- And you can substitute the oil with applesauce.
- You can use white flour or whole wheat flour.
- And you can substitute the sugar with honey for a healthier version.
- You will have the prettiest results by using a Vitamix as your blender. If you don’t have one, a regular blender will work; you will just be able to see small particles of spinach. That’s okay!
- These will stay fresh at room temperature covered for 2-3 days.
- And they freeze nicely in a freezer safe bag up to 3 months.
