Zucchini hidden in a rich chocolatey fudgy cookie that tastes like a brownie!
I love chocolate! But I think it’s safe to say my husband loves it more. When I am in batch baking mode, I don’t want anyone else lingering in the kitchen. It’s best to have the kitchen to myself when I need to get a lot of baking done in a short amount of time. (Batch baking is when I make several things at once.) But my husband lives up to the name I’ve given him, and pushes my buttons by getting real close to crossing over into the kitchen. I call him my fatal attraction for this reason – because one day I am going to keel over from the stress he induces from pushing my buttons!
That ‘line’ he crosses in the kitchen is because he is desperate for a chocolate fix. A chocoholic will do anything for chocolate, I suppose! He’ll quietly open the pantry door while he keeps me in the corner of his eye, open the mason jar lid with the chocolate chips in it, and pour like it’s his last meal! It’s the cutest thing. I love him for wanting to have fun with me! Even though he drives me crazy sometimes!
These Vegan Double Chocolate Brownie Zucchini Cookies will definitely, without a doubt satisfy your chocolate craving! They are sooooo fudgy and chocolatey you’ll need a glass of milk to go with every bite!
What You Need to Make Vegan Double Chocolate Brownie Zucchini Cookies
- Flour
- Cocoa Powder
- Baking Soda
- Salt
- Vegan Butter
- Brown Sugar
- Silk Vanilla Yogurt
- Zucchini
- Vegan Chocolate Chips
How to Make Vegan Double Chocolate Zucchini Brownie Cookies
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
- Grate 1 cup of zucchini and set aside.
- In a small bowl, mix 1 1/4 cup flour, 1/3 cup cocoa powder, 1/2 tsp baking soda, and 1/2 tsp salt until well combined.
- In a large bowl, mix together 6 tbsp melted vegan butter and 3/4 cup brown sugar. Mix in 1/4 cup Silk vanilla yogurt and 1 tsp vanilla extract until well combined.
- Add dry ingredients to large bowl and mix until just combined.
- Pour in 1 cup grated zucchini and mix until you have the consistency of brownie batter. Fold in 1 cup vegan chocolate chips.
- Using a 1 inch scoop, evenly distribute cookie dough balls onto the parchment paper lined pan and bake for 12 minutes.
- Remove from oven and let cool on the baking sheet for 10 minutes before removing them.
Tips for Making Vegan Double Chocolate Brownie Zucchini Cookies
- You can press in additional chocolate chips into the tops of the cookies right after they come out of the oven!
- And you can drizzle melted vegan chocolate over the tops of the cookies and call these Triple Chocolate Brownie Zucchini Cookies!

- 1/3 cup Cocoa Powder
- 1/2 tsp Baking Soda
