Easy Pumpkin Cream Cheese Muffins
We are officially in the season of outwardly expressing our thankfulness. This year I am thankful for the the blessings I’ve received through the strong storms I’ve weathered over the years. Every one of them has brought me to my knees, praying for God’s will while fighting the very strong urge to take control. Every time I’ve gotten back on my feet it’s because of God’s outstretched loving arms helping me back up!

What You’ll Need for the Muffin Batter:
- 1 box Spice Cake Mix
- 1 (15 oz) can Pumpkin Puree
- 1 cup Water
The Cream Cheese Mixture:
- 6 oz Cream Cheese, Softened
- 1 Egg Yolk
- 1/2 tsp Vanilla
- 3 tbsp Sugar
And the Crumb Topping:
- 2/3 cup Brown Sugar
- 2 tsp Cinnamon
- 1 1/3 cups Flour
- 1/2 cup Butter, Melted

How to Make Pumpkin Cream Cheese Muffins
- Preheat oven to 350 degrees. Line a muffin pan with muffin liners and set aside.
- In a large bowl, whisk together 1 box spice cake mix, 1 (15 oz) can pumpkin puree, and 1 cup water until well combined. Set aside.
- In a smaller bowl, beat together 6 oz softened cream cheese, 1 egg yolk, 1/2 tsp vanilla, and 3 tbsp sugar until smooth and creamy. Set aside.
- In a separate small bowl, whisk together 2/3 cup brown sugar, 2 tsp cinnamon, and 1 1/3 cups flour. Add in 1/2 cup melted butter. Using a fork, combine until you have crumbs.
- Place a spoonful of muffin batter in the bottom of each muffin liner. Top with a teaspoon of cream cheese mixture. Top with another spoonful of muffin batter, followed by a half teaspoon of cream cheese mixture. Generously cover with crumbs.
- Bake for 25 minutes.

- 1 cup Water
