I’ve been reflecting on the seasons of life lately. I feel it’s best to do it over one of these Apple Cinnamon Muffins!
I recently went to lunch with two girlfriends and I didn’t realize how much I needed that time with friends. It turns out we all have pain points in our marriages, but we still deeply love our husbands. And we all struggle with parenting because most of the time we have no idea what we are doing! Having that genuine, non-competitive conversation was good for my soul!
What You Need to Make Apple Cinnamon Muffins
- Flour
- White Sugar
- Brown Sugar
- Baking Powder
- Cinnamon
- Nutmeg
- Salt
- Egg
- Milk
- Applesauce
- Vanilla
- Apples
- Butter
How to Make Apple Cinnamon Muffins
- Preheat oven to 425 degrees. Line muffin pan with liners and spray with non-stick spray. Set aside.
- In a large bowl, combine 2 cups flour, 1/2 cup white sugar, 1/4 cup brown sugar, 2 tsp baking powder, 3 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 tsp salt. Mix to combine.
- In a separate bowl, combine 1 egg, 1 cup milk, 1/2 cup applesauce, and 2 1/2 tsp vanilla. Mix to combine.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Peel, core, and dice 1 1/2 cup apples and pour into the batter. Mix until well combined.
- Distribute batter into prepared muffin liners evenly.
- Make the streusel topping by combining 1/2 cup brown sugar, 1 tbsp white sugar, 1 1/2 tsp cinnamon, 2/3 cup flour, and 1/4 cup melted butter. Mix together until it looks like sand.
- Sprinkle streusel evenly over the batter.
- Bake for 5 minutes at 425 degrees. Without opening the door, decrease the oven temperature to 375 degrees and bake for 8-10 minutes or until a toothpick comes out clean.
