I don’t know how he does it, but my husband gets out of bed the first time his alarm goes off. It’s some sort of phenomenon – I just can’t comprehend it! Me on the other hand, I hit the snooze more than I care to share. I am actually an early bird. I love getting up early and conquering the day right away. It’s just the getting out of bed part that’s a struggle!
My husband recently woke our son up for school in good ‘ole Dad fashion. He threw the covers back and tickled him! I heard our son fussing about it so I told him he’s not the only one who has to deal with a rude wake-up call. I assured him that he does it to me, too! To which my husband said, “No, this is how I get Mom out of bed!” He grabbed our son’s ankles, whipped them over the side of the bed, and gave him a fast tow right out of bed!
Morning’s are a beautiful thing! I love the sunrise, the cool morning air, the bird’s singing, a quiet neighborhood and roads, empty stores, it’s great! What You Need to Make Vegan Pumpkin Oatmeal Squares
- Pumpkin Puree
- Unsweetened Vanilla Almond Milk
- Applesauce
- Maple Syrup
- Rolled Oats
- Flour
- Pumpkin Pie Spice
- Baking Powder
- Salt
- Chopped Pecans
- Mini Vegan Chocolate Chips
How to Make Vegan Pumpkin Oatmeal Squares
- Preheat oven to 375 degrees. Spray 9 x 9 pan with non-stick spray and set aside.
- In a bowl, whisk together 1 cup pumpkin puree, 1 1/4 cup unsweetened vanilla almond milk, 1/2 cup applesauce, and 1/3 cup maple syrup.
- Stir in 2 cups rolled oats, 1/2 cup flour, 2 tsp pumpkin pie spice, 1 tsp baking powder, and 1/2 tsp salt.
- Pour mixture into the prepared baking dish and spread evenly. Sprinkle 1/3 cup chopped pecans and 1/4 cup mini vegan chocolate chips on top.
- Bake 35-40 minutes.
- Let cool and cut into squares.
Tips for Making Vegan Pumpkin Oatmeal Squares
- The chopped pecans and mini-chocolate chips are optional. You can sprinkle them on the top and/or sprinkle some in the batter before baking!
- You don’t have to make the vegan version of these, you can easily swap for regular dairy ingredients!
