There are two things that can throw my entire day off… if I go to bed too late the night before or if I skip breakfast. I can overcome just about anything that gets in the way of my focus for the day like a change in plans, unexpected errands, or unplanned to-do’s on my list. But when it comes to skipping breakfast, I am doomed for the day. It is nearly impossible to stay focused and/or motivated to take care of what I had planned for the day much less handle what wasn’t planned.
It blows my mind how important breakfast is. I’ve skipped other meals and been just fine. But if I skip breakfast, it’s detrimental to my entire day! Don’t skip breakfast, people. It’s just not worth losing an entire day over!

What You Need to Make Easy Healthy Granola
- Quick Oats
- Shredded Coconut
- Wheat Germ
- Whole Wheat Flour
- Salt
- Cashews (Or Mixture of Nuts)
- Brown Sugar
- Oil
- Water
- Honey
- Vanilla

How to Make Easy Healthy Granola
- Preheat oven to 250 degrees. Line baking pan with parchment paper and set aside.
- Combine 1 large box of quick oats (11 cups), 2 cups shredded coconut, 2 cups wheat germ, 1 cup whole wheat flour, 1 tbsp salt, and 1 cup cashews (or mixture of nuts).
- In a blender, combine 1/2 cup brown sugar, 3/4 cup oil, 1 cup water, 1 cup honey, and 1 tbsp vanilla.
- Add to dry ingredients. Mix well.
- Pour onto parchment paper lined pan and spread evenly.
- Bake for 1 hour or until golden brown. Stir every 20 minutes.

Tips for Making Easy Healthy Granola
- You can easily cut this recipe in half if desired.
- To make chunky granola, squeeze small amounts of granola in your hand until firm before baking.
