Best Chickpea Tuna Salad Recipe
I have always been a finicky eater. I used to assume I wouldn’t like something, especially healthy stuff, without even trying it. So I stuck to the boring stuff I knew I would like. I had a pretty bland diet, which consisted of a lot of processed foods, sugar, starch, and carbs.
In my quest to eat healthier, I decided I wasn’t going to assume I didn’t like things I hadn’t tried yet. I cannot believe that I have actually followed through on trying the ‘weird stuff,’ AND I have liked most of it! For example, the old me would have never tried Cucumber Avocado Salsa, but I did and it’s my favorite salsa now!
You can put this Chickpea Mock Tuna on a croissant, regular sandwich bread, put it open face on a toasted English muffin, or use it as a dip with crackers! Works great for packed lunches, too. My husband likes to add a slice of cheese to it.
