4th of July Funfetti Cupcakes with Cake Mix
I recently bought a new to me car (long story). We absolutely LOVE it!! I am in my early (probably closer to mid, but I’m in denial) 40’s and it’s the nicest car I’ve ever owned! My husband and I have never had 2 new to us cars at the same time. We feel very, very blessed! I do miss having a junk car, though. It’s so much easier not to care sometimes!
While we were waiting for the DMV paperwork to be finished, one of the guys we were working with was filling his cup with coffee and sharing how much he missed the cookies they used to leave out for their customers. Because of course, the salesman ate just as many (or more) than the customers did so they stopped putting them out. This guy was hilarious and I knew I just had to send him some cookies!
I was super excited to come home and make them cookies as a thank you… then… well… I passed by the cookies in Aldi and decided to press the ‘easy button’ and bought the guys cookies instead. And you know what, that’s totally okay! It’s better to follow through on the thought, no matter what it looks like, than to have the intentions and not follow through on them because it’s different than your original idea.
I am giving you permission to make 4th of July Funfetti Cupcakes with a boxed cake mix! Bringing something to the party that is easy to make is better than feeling guilty about not bringing something because you didn’t get around to making ‘from scratch’ cupcakes.
It’s okay to take shortcuts that save you time in the kitchen! What You’ll Need for the Cupcakes:
- 1 box White Cake Mix + Ingredients on Box
- 1/2 cup Red & Blue Sprinkles
And the Cream Cheese Frosting:
- 1/2 cup Butter, Softened
- 1 (8 oz) Cream Cheese, Softened
- 3 1/2 cups Powdered Sugar
- 1 tsp Vanilla

How to Make 4th of July Funfetti Cupcakes
- Preheat oven according to directions on the box.
- Line a muffin tin with cupcake liners.
- In a large bowl, prepare cake batter according to directions on the box.
- Fold in 1/2 cup red & blue sprinkles just until combined.
- Fill muffin liners until almost full.
- Bake for the lowest amount of time recommended on the box. A toothpick in the center should come out clean. Moist crumbs are okay, you don’t want to over bake the muffins.
- In a large bowl, beat together 1/2 cup softened butter, 1 (8 oz) softened cream cheese, 3 1/2 cups powdered sugar, and 1 tsp vanilla until smooth and creamy.
- Pipe, or spread, onto cooled cupcakes.
- Top with red, white, and blue sprinkles and/or other patriotic decorations.
