These soft and chewy minty cookies are packed with pieces of Oreo in every bite!

Mint Oreo Cookies
It’s St. Patrick’s Day and we are celebrating with these delicious Mint Oreo Pudding Cookies! I’m all decked out in a holiday scarf and matching socks, and my son wore his leprechaun shirt to school. Except, he had a sweatshirt over it. We all know I am over the top, so you can imagine my shock at his attempt to cover up the shirt!
I thought I could at least get him to take off his sweatshirt to show Grandma his shirt *wink, but nope… he said I could take a picture of it and send it to her when he got home. As I was lamenting to my Mom about his lack of enthusiasm, she reminded me that he is growing up and it’s not cool to dress for the holiday’s anymore. I suppose I should just start accepting he’s not a little baby doll I can dress anymore!

What You’ll Need:
- 1 cup Butter, Softened
- 1/2 cup Brown Sugar
- 1/2 cup Sugar
- 1 (4.2 oz) box of Oreo Cookies & Cream Pudding Mix
- 2 Eggs
- 1 tsp Vanilla
- 1 tsp Mint Extract
- 2 1/4 cups Flour
- 1 tsp Baking Soda
- 3 drops Blue Food Coloring
- 12 drops Green Food Coloring
- 15 Mint Oreo Cookies

How to Make Mint Oreo Pudding Cookies
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside.
- Cream together 1 cup softened butter, 1/2 cup brown sugar, and 1/2 cup sugar. Then mix in 1 (4.2 oz) box of Oreo Cookies & Cream dry pudding mix until well combined.
- Add in 2 eggs, 1 tsp vanilla, and 1 tsp mint extract.
- Combine 2 1/4 cups flour and 1 tsp baking soda in a separate bowl, then mix into the cookie dough.
- Beat in 3 drops of blue food coloring and 12 drops of green food coloring.
- Crush 15 Mint Oreo’s and fold into cookie dough.
- Evenly distribute 1 inch balls of cookie dough, allowing space between them, onto the cookie sheet and bake for 10 minutes.

Recipe Notes:
- Mint – You must use mint extract, not peppermint.
- Parchment paper – Always use parchment paper on your cookie sheets instead of non-stick spray. The parchment paper helps the cookies bake to perfection!
- Baking time – Always start with baking your cookies at the lowest time recommended, you never want to over bake your cookies.
