Taquitos with Mashed Potato
So, funny story.
We love my friend Edith’s Mashed Potato Taquitos. So one night I decided to try replicating them, but with instant mashed potatoes of course. Because who has time to make real ones?!
I started with what I thought I should be doing and it was a disaster because the corn tortillas were falling apart. Just as I was ready to give up and leave it to the professionals, I decided to call Edith for advice. I should have started with calling her!
She told me I was supposed to warm up the corn tortillas first. It worked like a charm!
I was so excited to serve them for dinner once I finally had them looking somewhat normal! Then my son gave his review… “They are good, but Edith’s are better.” Sigh. It’s true. Nobody makes Mexican food like she does! Her famous beans are actually in these pictures! And the instant mashed potatoes didn’t do me any favors, ha!
We love Mexican food! I’ll never stop trying to make it, even though I know I’ll never perfect it. For a complete meal, you could make Mexican Street Corn Casserole and Fried Ice Cream Cake to go with!

What You’ll Need:
- Creamy Mashed Potatoes
- 12 Corn Tortillas
- Oil for Frying
- Toppings of Choice

How to Make Mashed Potato Taquitos
- Prepare Creamy Mashed Potatoes. Set aside.
- Heat oil in a large frying pan over medium heat.
- Warm a corn tortilla in the microwave for 10 seconds so it’s pliable.
- Spread a layer of mashed potatoes down the center of the tortilla and roll up.
- Place seam side down in the hot oil using a tongs.
- Let fry until golden brown and crispy. Flip using tongs and repeat with the other side.
- Remove from the oil using the tongs and place on paper towel. Fill frying pan and keep repeating the steps as you are able.
- Serve with your favorite toppings.

- Mashed Potatoes – You can make any mashed potato recipe you’d like. I take a shortcut and just use instant mashed potatoes!
