Homemade Lemon Curd Recipe
I am ridiculous when it comes to compliments. Every now and then someone will say they like my shirt, or something like that, and I can’t seem to just say, ‘Thank you!’ I feel compelled to go into this long drawn out explanation of where I got it, blah, blah.
I know this about myself. I know nobody wants to hear it, yet I still do it.
So I am going to tell you something you’ll want to hear instead – make these Scones, spread some of this Lemon Curd on them, and top with whipped cream. You’ll thank me later!

What You’ll Need:
- 3 Eggs
- 1 cup Sugar
- 1/2 cup Lemon Juice
- 1/4 cup Butter
- 1 tbsp Lemon Zest

How to Make Lemon Curd
- In a small sauce pan over medium heat, whisk together 3 eggs, 1 cup sugar, and 1/2 cup lemon juice until well mixed.
- Add in 1/4 cup cubed butter and 1 tbsp lemon zest.
- Whisk constantly until mixture is thickened. The mixture should coat the back of a spoon.
- Transfer to a small bowl and cool for 10 minutes.
- Refrigerate covered until cold.
