Cream Cheese Breakfast Quesadilla
My son insists he isn’t getting married. Girls are a bother to him, he says he has better things to do like play sports and LEGO’s. My husband was giving him a hard time the other day and told him, “Some day you will meet a girl that steals your heart… and all your money!” HA! We got a good laugh at that.
Blueberry Breakfast Quesadilla’s don’t just have to be for breakfast, they work for any meal! They are quick and easy and you can pair any flavor of cream cheese with any kind of fruit. This is a great idea for when you have fruit to use up!

What You’ll Need:
- 1 Burrito Size Flour Tortilla
- 2 tbsp Cinnamon Cream Cheese
- 1/3 cup Fresh Blueberries
- 1 tbsp Butter, Softened

How to Make Blueberry Breakfast Quesadillas
- Spread 2 tbsp cinnamon cream cheese on one side of a burrito size flour tortilla.
- Sprinkle 1/3 cup blueberries over half of it. Fold other side over and press down lightly.
- Spread 1/2 tbsp softened butter on one outside of the quesadilla, flip and spread the remaining 1/2 tbsp butter on the other outside.
- Place on a skillet over medium heat and grill each side until golden brown.

Recipe Notes:
- Blueberries – It is best to use fresh blueberries. When you use frozen, you’ll have excessive blueberry juice running out of the quesadilla and it gets really messy!
- Don’t Overfill – You’ll have a disaster if you overfill these with blueberries. You want enough so you can taste them, but you don’t want so many that they are falling out with every bite.
- Fruit – Try any fruit in this recipe!
- Cream Cheese – You can also change out the flavor of cream cheese!
- Make Ahead – These don’t work great for making ahead. It’s best to eat them right away.
- Freezing – I don’t recommend freezing these. When you thaw them you will have a mess!

Ingredients
- 1 Burrito Size Flour Tortilla
