Vegan Apple Bread Recipe
My son is growing up so fast. I recently just watched as he packed for an overnight field trip he is taking for school. He’s like a little version of me, following a checklist and checking it twice. Except he is way more chill about forgetting things than I am – he figures it wasn’t that important if he forgot to pack it!
I remember the days I packed for him. Now he is independent and doing things that need to be done all on his own. I know that’s the way it’s supposed to be, but it’s still hard watching him grow up so quickly. It’s bittersweet. I want him to spread his wings and fly, but I also wish time would slow down.

What You’ll Need for the Bread:
- 2 1/2 cups Flour
- 1 cup Brown Sugar
- 3 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1 tsp Cinnamon
- 1 cup Vanilla Almond Milk
- 1/2 cup Oil
- 1 tsp Vanilla
- 1 Apple, Peeled & Finely Chopped
The Icing:
- 1/4 cup Vegan Cream Cheese, Softened
- 1/2 cup Powdered Sugar
- 2 tbsp Vegan Butter, Softened
And the Caramelized Apples:
- 1 Apple, Peeled & Cubed
- 1 tbsp Vegan Butter
- 2 tbsp Brown Sugar
- 1/4 tsp Cinnamon
How to Make Vegan Apple Bread
- Preheat oven to 350 degrees. Spray a bread loaf pan with non-stick spray and set aside.
- In a large bowl, whisk together 2 1/2 cups flour, 1 cup brown sugar, 3 tsp baking powder, 1/4 tsp baking soda, and 1 tsp cinnamon.
- Mix in 1 cup vanilla almond milk, 1/2 cup oil, and 1 tsp vanilla.
- Fold in 1 peeled and finely chopped apple.
- Pour the batter into the prepared pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Check the bread at 30 minutes. If it’s browning too quickly, cover with aluminum foil for the remaining baking time.
- Let the bread rest for 10 minutes. Then remove from pan and transfer to a wire rack to finish cooling.
- In the meantime, make the icing by beating together 1/4 cup softened vegan cream cheese, 1/2 cup powdered sugar, and 2 tbsp softened vegan butter until smooth. Set aside.
- Add 1 peeled and cubed apple and 1 tbsp vegan butter to a sauce pan over medium heat. Sauté until the apples are almost tender and slightly golden brown.
- Add in 2 tbsp brown sugar and 1/4 tsp cinnamon. Gently stir while caramelizing. If they start to stick to the pan, add a splash of water. Once finished cooking, remove from heat and let cool.
- Just before serving, spread icing over the top of the bread followed by the caramelized apples.
