Simple Vegetarian Meatballs
When it comes to meal rotation, it’s easy to fall back on the recipes you know are fast and your family loves. Trust me, I get it. But with only 5-ingredients you’ll have these babies whipped up and on the table in 30 minutes. Your family will thank you for trying something new!
These Vegetarian Meatballs are a tried and true family recipe, with great flavor and texture. Someone always asks for the recipe! We served these along with real meatballs at our wedding reception and they were the first to go. The meat eaters actually preferred the meatless meatballs!
I like being a vegetarian, I don’t feel like I am missing out on anything. The carnivores in my life have always raved about the meatless alternatives my family has fed them. They especially love my Mom’s Vegetarian Sloppy Joe’s, my Dad’s Vegetarian Beefless Stew, and these Vegetarian Meatballs!

What You’ll Need:
- 5 cups Rice Krispies Cereal
- 8 oz Cream Cheese, Softened
- 1/2 cup Pecan Meal
- 1 packet Dry Onion Soup Mix
- 4 Eggs

How to Make Vegetarian Meatballs
- Preheat the oven to 350 degrees.
- Combine 5 cups of Rice Krispies Cereal, 8 oz softened cream cheese, 1/2 cup pecan meal, 1 package of dry onion soup mix, and 4 eggs into a large bowl. Mix well.
- Form into 1 inch balls. Using the palm of your hands, roll into firm balls. Note: Don’t squeeze or squish them, just firmly roll them.
- Place onto baking sheet.
- Bake for 20 minutes.
- Cover with vegetarian gravy of choice.
What to Make with Your Leftover Rice Krispies:

Tips:
- Gravy – If you have trouble finding vegetarian gravy, look in the gluten-free section of the grocery store. Often times the gluten-free gravy doesn’t have meat fat or flavoring.
- Scoop – When I scoop the mixture out of the bowl, I use a 1-inch cookie scoop. It makes the job of putting these into a ball shape super quick and easy!
- Efficiency – I like to place the scooped mixture onto the pan first. Once the bowl is empty, I got back and roll each meatball. I do it this way because your hands get pretty messy so I save that part for last!
- Serving –
- You can serve these as a toothpick appetizer with or without gravy.
- Serve as a side dish at mealtime.
- You can put these in a sub bun with marinara sauce.
- Or, serve them on spaghetti!
- Make ahead – You can easily make these ahead of time, just don’t cover with gravy until ready to serve.
- Freezing – These freeze nicely! Just place into a freezer safe bag once cooled.
