Blender Spinach Muffins
Summer break is on the horizon and I couldn’t be more excited! We recently had a taste of an early Spring only to be followed by more snow and wet, cold weather. Only in Wisconsin! But trees are budding, the grass is turning green, and a countdown to the last day of school has begun!
We eat a lot more muffins in the summer than in the winter months. It’s nice to have them available when the kids think they are starving only a few minutes after they eat lunch! For that reason, I like to have Hulk Spinach Banana Muffins in the rotation. At least they are getting in some spinach! They are easy to make, takes me only a few minutes to whip them up! They keep nicely, too, so they will travel well to the pool or lake.
Some other snacks I like are Peanut Butter Cherio Bars, Monster Cookie Energy Balls, or No Bake Nutella S’mores Granola Bars!
What You’ll Need:
- 3/4 cup Vanilla Yogurt
- 1/4 cup Oil
- 1 Overripe Banana
- 2 tsp Vanilla
- 3 cups Fresh Spinach
- 2 cups Flour
- 3/4 cup Sugar
- 3 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Cinnamon
- 1/2 tsp Salt
How to Make Hulk Spinach Banana Muffins
- Preheat oven to 375 degrees. Line a muffin pan with liners and set aside.
- In a blender, combine 3/4 cup vanilla yogurt, 1/4 cup oil, 1 overripe banana, 2 tsp vanilla, and 3 cups packed fresh spinach. Blend until smooth.
- In a separate bowl, combine 2 cups flour, 3/4 cup sugar, 3 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon, and 1/2 tsp salt. Mix together until well combined.
- Pour the batter into the dry ingredient mixture and mix just until well combined.
- Divide evenly between muffin liners and bake for 15-16 minutes or until a toothpick inserted into the center comes out clean.

Recipe Notes:
- Yogurt – You can substitute with milk if you’d like.
- Oil – You can substitute with applesauce.
- Flour – You can use white or wheat flour.
- Sugar – You can substitute with honey for a healthier version.
- Vegan – You can make these vegan by using vegan yogurt or almond/soy milk.
- Blender – You will have the prettiest results by using a Vitamix as your blender. If you don’t have one, a regular blender will work, you will just be able to see small pieces of spinach. But that’s okay!
- Mini-Chocolate Chips – Stir in mini-chocolate chips for fun!
- Freezer – These freeze well in a freezer safe bag.
