After much research, I came to the conclusion I need to start with a completely different setup and angle. I have been so happy with the results! Why this Recipe Works:
- Perfect Sweetness Level – The combination of sugar, bananas, and chocolate chips gives a balanced sweetness – flavorful but not overly sugary.
- Proper Rise – Baking soda reacts with the moisture and natural acidity in the bananas to help the bread rise and stay light.
- Flavor Contrast – The mini chocolate chips add richness and pockets of sweetness that contrast with the mild zucchini and banana flavors.
- Flavor Depth – A touch of vanilla and cinnamon enhances everything, giving the loaf a warm, bakery-style taste.
Ingredients You’ll Need:
- 2 Bananas (Mashed) – Adds natural sweetness and moisture, helping keep the bread soft and tender.
- 1/3 cup Butter (Melted) – Provides richness and flavor while contributing to a moist texture.
- 1/2 cup Sugar – Sweetens the bread and helps create a soft crumb.
- 1 Egg – Acts as a binder, giving the bread structure and stability.
- 1 tsp Vanilla – Enhances overall flavor and adds warmth and depth.
- 1 tsp Baking Soda – Leavens the bread, helping it rise and become light and fluffy.
- 1/2 tsp Cinnamon – Adds a subtle warm spice that pairs well with the zucchini and chocolate.
- 1 1/2 cups Flour – Forms the structure of the bread, giving it body and shape.
- 1 1/4 cups Zucchini (Shredded) – Adds moisture without a strong flavor, making the bread incredibly soft.
- 1/2 cup Mini Chocolate Chips – Provides bursts of sweetness and rich chocolate flavor throughout the loaf.
How to Make Chocolate Chip Zucchini Bread
- Preheat oven to 350 degrees. Spray a bread loaf pan with non-stick spray and set aside.
- In a large bowl, mash 2 bananas. Stir in 1/3 cup melted butter until smooth.
- Whisk in 1/2 cup sugar, 1 egg, 1 tsp vanilla, 1 tsp baking soda, 1/2 tsp cinnamon, and 1 1/2 cups flour and mix until thick batter forms.
- Fold in 1 1/4 cups shredded zucchini and 1/2 cup mini chocolate chips.
- Spread batter evenly into the prepared pan. Sprinkle additional mini chocolate chips on top of the batter.
- Bake for 50-60 minutes, or until toothpick inserted into the center comes out clean. Moist crumbs are okay, you don’t want to overbake it.
My Best Tips:
- Don’t Squeeze all the Moisture Out – Zucchini is what makes the bread soft and tender!
- Measure Flour Correctly – Too much flour makes dry bread.
- Check for Doneness Early – Every oven varies. Start checking about 5-10 minutes before the recommended time. A toothpick should come out with moist crumbs. (Melty chocolate is fine!)
- Let Cool Before Slicing – It’s tempting, but wait! Cooling helps the bread set and improves texture.
