Easy to make with a thick oatmeal cookie crust and packed with fresh summer blueberries that ooze out of every bite!
I’ve been enjoying mid-day walks in the fresh air at a near-by park. It’s a beautiful path that weaves around a baseball diamond, through the woods and rivers, around a small pond, and over a wooden planked bridge. The birds are so active and cheerful, the frogs have been croaking, and I can hear the laughter of little ones coming from the park.

I pass right by the playground on my way out and every single time I walk by my mind starts to wonder. And my heart starts to hurt a little. I see all of the Mom’s who are lucky enough to stay at home with their children and I wonder why I wasn’t blessed with being able to stay home when my son was little.
Life is full of unanswered questions and it’s easy to keep them on repeat, asking ourselves over and over why things are the way they are. I’ve found the easiest way to cope is to trust God’s plan for my life. When everything is going our way it’s easy to let go of our worries, wonders, and why’s. But there are times I feel like I am standing on shaky ground and start to question God’s plan and His delayed answers to my prayers. So it is my prayer that He works everything together for good, even when it doesn’t feel so good at the time!
Ingredients to Make Easy Blueberry Oatmeal Crumble Bars
- Butter
- Vanilla Extract
- Flour
- Old Fashioned Oats
- Honey
- Brown Sugar
- Ground Cinnamon
- Pinch of Salt
- Fresh Blueberries
- Lemon Juice
- Corn Starch
- Sugar
How to Make Blueberry Oatmeal Crumble Bars
- Preheat the oven to 350 degrees.
- Line the bottom of an 8 x 8 pan with parchment paper and set aside.
- To make the crust/crumble: mix together 1 1/2 cup flour, 1 1/2 cups old fashioned oats, 1/2 cup honey, 1/4 cup brown sugar, 1/2 tsp ground cinnamon, and a pinch of salt.
- Stir in 6 tbsp melted butter and 1 tsp vanilla extract into the mixture. Mix until well combined. Reserve 1 cup of the crust/crumble mixture and set aside; this will be used to crumble on top.
- Press the crust mixture evenly into the prepared pan.
- Using the same bowl, combine 2 1/2 cups fresh blueberries, 2 tbsp lemon juice, 2 tsp corn starch, and 1/4 cup sugar. Mix well. Place the blueberries over the crust evenly.
- Sprinkle the reserved 1 cup of crust/crumble mixture over the top of the blueberries.
- Bake for 45 minutes.
How to Make Blueberry Oatmeal Crumble Bars Vegan
Just substitute the butter with vegan butter and the honey with agave!
How to Store Blueberry Oatmeal Crumble Bars
For longer lasting bars, keep them covered in the refrigerator. They will keep up to a week.
These only take a few minutes to put together and your whole family will absolutely love them! And I can’t even put into words how amazing your house will continue to smell after you take these bars out of the oven!
