I can’t remember the last easy day I had. It seems like the past couple of weeks have just presented a variety of challenges that I’d rather avoid, and unfortunately they are unavoidable. I’m not sure if it’s God’s way of humbling me or reminding me He’ll get me through anything I ask for His help with. Either way, I am craving easy.
So why not bake something easy! These Mint Oreo Brownies are dangerously easy. All you have to do is put together a boxed brownie mix, stir in some crushed Mint Oreo’s, and top with some more Oreo’s. Because let’s face it, you can never have too many!

- 18-20 Mint Oreos
How to Make Mint Oreo Brownies
- Preheat oven according to directions on the back of the box for a 9 x 9 pan. Spray pan with non-stick spray.
- Follow the instructions on the back of 1 box brownie mix to make the batter.
- Crush 10 Mint Oreo’s and gently fold in. Spread batter evenly into the prepared pan.
- Randomly place 3-4 whole Mint Oreo’s in the top of the batter. Then break up a few additional Oreo’s and randomly press into the rest of the open areas of the top of the batter.
- Spread evenly into prepared pan.
- Bake for time suggested on the back of the box for 9 x 9 pan.
