Easy Cucumber Pasta Salad
My Grandma Smith was known for her Creamy Cucumber Salad. Every time we spent time with her at our cabin over the summer, she would make it for us! Although, as kids at the time, I didn’t appreciate onions so I picked them out. Now I don’t mind them!
This Creamy Cucumber Pasta Salad reminds me of that dish! And the best part is, a friend of mine recommended this recipe to me! She found it over at Spend with Pennies! I love this super creative variation of a nostalgic recipe!

What You’ll Need:
- 1/2 pound Rotini Pasta
- 1 Cucumber, Thinly Sliced
- 1/2 Sweet White Onion, Thinly Sliced
- 1/2 cup Sour Cream
- 1/2 cup Mayonnaise
- 1 tsp Sugar
- 1/2 tsp Salt
- 2 tbsp Dill
- 2 tbsp White Vinegar

How to Make Creamy Cucumber Pasta Salad
- Cook 1/2 pound rotini pasta to al dente according to the package directions, then rinse under cold water.
- Cut cucumber in half lengthwise and remove seeds using a spoon. Cut into thin slices and set aside.
- Thinly slice 1/2 sweet white onion and soak in a bowl of cold water.
- Whisk together 1/2 cup sour cream, 1/2 cup mayonnaise, 1 tsp sugar, 1/2 tsp salt, 2 tbsp dill, 2 tbsp white vinegar in a small bowl.
- Toss all ingredients together in a large bowl and let keep in the refrigerator for 45 minutes before serving.
