Vegetarian Sweet & Sour Meatballs with Apricot Jam
It’s voting season, which means we are inundated with political ads. I don’t know about you, but I’ve never changed my vote based on an oversized postcard I get in the mail, pop-up ads on my screen, or repetitive migraine inducing commercials!
In this season of voting, please don’t let differences in opinions cause conflict in your life. I know sometimes it’s easier said than done, but you can and should still love (or at least be kind to) the people you disagree with! There are no two people in this world who perfectly agree with each other about everything.
Just like your family may not agree what to serve these Vegetarian Sweet & Sour Meatballs with! Some may want it over rice and some may want to serve it with a side of Creamy Mashed Potatoes & Easy Garlic Knots!
What You’ll Need for the Meatballs:
- 3 cups Pepperidge Farms Herbed Seasoning Stuffing
- 1 1/2 cups Pecan Meal
- 1 tsp Salt
- 1 Onion, Diced
- 1 1/2 cups Cheddar Cheese, Shredded
- 8 Eggs
- 1 tsp Sage
- 4 cloves Garlic
- 1 tsp Garlic Salt
- 2 tbsp Parsley Flakes
And the Apricot Sauce:
- 1/2 cup Oil
- 1/2 cup Lemon Juice
- 1 cup Ketchup
- 1 tsp Salt
- 4 tbsp Brown Sugar
- 2/3 of 17.25 oz Apricot Jam Jar
- 4 tbsp Onion, Diced
- 1 tsp Oregano
- 4-6 dashes Tabasco Sauce
How to Make Vegetarian Sweet & Sour Meatballs
- Preheat oven to 400 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
- In a large bowl, mix together 3 cups Pepperidge Farms Herbed Seasoning Stuffing, 1 1/2 cups pecan meal, 1 tsp salt, 1 diced onion, 1 1/2 cups shredded cheddar cheese, 8 eggs, 1 tsp sage, 4 garlic cloves, 1 tsp garlic salt, and 2 tbsp parsley flakes.
- Roll into balls and place in prepared pan.
- In a separate bowl, make the apricot sauce by whisking together 1/2 cup oil, 1/2 cup lemon juice, 1 cup ketchup, 1 tsp salt, 4 tbsp brown sugar, 2/3 of 17.25 oz apricot jam jar, 4 tbsp diced onion, 1 tsp oregano, and 4-6 dashes of tabasco sauce.
- Pour over meatballs.
- Bake for 35-40 minutes.
