Mini Egg Easter Cookie Bars
The other night we were talking about how music has changed so much. My husband & I used to keep up on the top hits being able to sing along with most of them! Now, we have absolutely no clue what the top hits are and can barely understand what they are saying! We are getting old.
So my son turned on a song to familiarize us with ‘what’s cool.’ I was in the kitchen making these Mini Cadbury Egg Cookie Bars and dropped everything in shock as my husband started busting some pretty good moves with our son! It was equal parts adorable, pleasantly surprising, and hysterical. We laughed so hard at his attempts to dance with the beat! It was a great memory made that night. My husband is so much cooler then I am!
You can easily be cool this Easter by making some Easter Bunny Cinnamon Rolls, Scotcheroo Bird Nest Bites, or Butterscotch and Peanut Butter Bird Nests Cookies!
What You’ll Need:
- 2 cups + 2 tbsp Flour
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- 3/4 cup Butter, Melted
- 1 cup Brown Sugar
- 1/2 cup Sugar
- 1 Egg
- 1 Egg Yolk
- 2 tsp Vanilla
- 1 cup Chocolate Chips
- 1 cup Mini Cadbury Eggs, Chopped
How to Make Mini Cadbury Egg Cookie Bars
- Preheat oven to 325 degrees. Spray a 9 x 13 metal pan with non-stick spray and set aside.
- In a small bowl, whisk together 2 cups + 2 tbsp flour, 1/2 tsp salt, and 1/2 tsp baking soda together.
- In a separate medium bowl, beat together 3/4 cup melted butter, 1 cup brown sugar, and 1/2 cup sugar until well combined. Add in 1 egg, 1 egg yolk, and 2 tsp vanilla and mix.
- Fold in dry ingredients. When half-way combined, add in 1 cup chocolate chips and 1 cup chopped Mini Cadbury Eggs. Continue to fold until just combined.
- Press dough down evenly into the pan. Bake for 23 minutes.
- Right after removing from the oven, press in additional chocolate chips and chopped Mini Cadbury Eggs (leaving a few whole) gently into the top of the cookie bars.
