Gooey Butterscotch Nut Bar Recipe
We have a black squirrel problem. Those little black ninja’s are so pesky!
All summer long I’ve been watching them act like they own the place, from sun up to sun down. One night we were sitting on the deck and the furry rats were running around taking leaves off my trees as they pleased, so I asked my husband to use any means necessary to get rid of them.
He refused. He said he wasn’t going to kill them because he hadn’t seen them commit the crimes I was accusing them of! I should have known. He is such a softy.
So I said I would deal with them myself. I made big plans to fill a bucket with water, top it off with bird seed, then set out a bridge to their final destination.
Turns out I am all talk and no action. I couldn’t bring myself to do it! Those naughty little pests work so hard all day long burying their treasure in my yard, stealing my leaves for their house, and chasing birds out of my trees… I just couldn’t let them die such a horrible death after spending their lives working so hard!
So here we are. I want them gone, but I just want them to move away, I don’t want to drown them. My husband has relentlessly teased me about my bipolar approach to this squirrel drama. Sigh. We are just a bunch of nuts!

What You’ll Need:
- 1 (17.5 oz) package Sugar Cookie Mix
- 1 (3.4 oz) Instant Butterscotch Pudding Mix
- 1/2 cup Butter, Softened
- 1 Egg
- 1 (14 oz) bag Caramels, Unwrapped
- 1/2 cup Evaporated Milk
- 2 cups Mixed Nuts
- 1 tsp Vanilla
- 1 cup Butterscotch Chips

How to Make Gooey Butterscotch Nut Bars
- Preheat oven to 350 degrees. Spray 9 x 13 pan with non-stick spray and set aside.
- In a medium bowl, combine 1 (17.5 oz) package sugar cookie mix, 1 (3.4 oz) instant butterscotch pudding mix, 1/2 cup softened butter, and 1 egg.
- Press evenly into prepared pan. Bake for 20 minutes.
- In a large sauce pan over medium heat, combine 1 (14 oz) bag unwrapped caramels and 1/2 cup evaporated milk. Stir constantly.
- Once smooth and melted, remove from the heat and stir in 2 cups mixed nuts and 1 tsp vanilla.
- Pour evenly over the crust and sprinkle with 1 cup butterscotch chips.
