Caramel Apple Cheesecake Bars Recipe
My Mom recently cleaned out a file of stuff she saved from when I was in High School. She had a stack of school newspapers, of which I was the editor. I had so much fun sorting through all of it, reflecting on so many great memories!
One of the first things I noticed was my name… it was misspelled. That’s right. The editor of the school newspaper misspelled her name. (#facepalm) My Aunt Laurina will say I am still going strong on typos! HA!
After reading some of the articles I wrote, I question the judgement of those who gave me that job. Let’s just say that’s why I bake more then I type – I am really doing all of you a favor by keeping my blog posts short and sweet!

What You’ll Need for the Shortbread Crust:
- 1 3/4 cups Flour
- 1/2 cup Brown Sugar
- 3/4 cup Butter, Softened
The Cheesecake Layer:
- 2 (8 oz) packages Cream Cheese, Softened
- 1/2 cup Sugar
- 1 tsp Vanilla
- 2 Eggs
Apple Layer:
- 3 cups Apples (Peeled & Diced)
- 2 tbsp Brown Sugar
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
And the Streusel Topping:
- 1 cup Flour
- 1/2 cup Quick Oats
- 2/3 cup Brown Sugar
- 1 1/2 tsp Cinnamon
- 1/2 cup Butter, Melted
- Caramel Sauce
How to Make Caramel Apple Cheesecake Bars
- Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
- In a small bowl, make the shortbread crust by combining 1 3/4 cups flour, 1/2 cup brown sugar, and 3/4 cup softened butter with a fork. The mixture will be crumbly.
- Press into the prepared pan and bake for 20 minutes.
- In a medium bowl, make the cream cheese layer by beating together 2 (8 oz) packages softened cream cheese, 1/2 cup sugar, and 1 tsp vanilla. Add in 2 eggs and beat until well combined. Set aside.
- Peel, core, and dice enough apples to equal 3 cups. In a mixing bowl, combine the apples with 2 tbsp brown sugar, 1/2 tsp cinnamon, and 1/4 tsp nutmeg. Set aside.
- In a medium bowl, make the streusel layer by combining 1 cup flour, 1/2 cup quick oats, 2/3 cup brown sugar, 1 1/2 tsp cinnamon, and 1/2 cup melted butter. The mixture will be thick, so use your hands to clump together.
- When the crust is done, let cool for 10 minutes.
- Spread the cheesecake layer over the crust evenly. Then spread the apples over the cheesecake layer. Sprinkle the streusel layer evenly over the apples.
- Bake for 30-40 minutes, until the cheesecake layer is set.
- Let cool and keep refrigerated. Once cold and firm, serve with a drizzle of caramel sauce over each piece.
