What to Do With Green Beans
I absolutely love the Farmer’s Market! It’s one of the reasons I don’t have a garden of my own. It’s so easy to go there and grab all of the fresh veggies I need every week!
But if you’ve ever gardened, then you know how quickly you can end up with way more vegetables than you need or know what to do with. If you have a lot of green beans and don’t know what to do with them, you can make these Easy Green Beans, freeze, or can them!

What You’ll Need:
- 2 – 2 1/2 lbs Fresh, Whole Green Beans
- 1/2 cup Green Onions, Sliced Thin
- 1/4 cup Garlic, Chopped
- 1/4 cup Olive Oil

How to Easily Make Green Beans
- Trim the ends off of 2 – 2 1/2 pounds fresh, whole green beans.
- Soak in cold water for a 1/2 hour, then drain.
- Steam them in a covered pot with a little water until tender crisp. Test readiness by biting into a green bean.
- Put into cold water again to stop cooking.
- In the meantime, saute 1/2 cup thinly sliced green onions, 1/4 cup finely chopped garlic, and 1/4 cup olive oil.
- Once sauteed, drain the green beans again and add to the sauteed mixture. Toss to coat with oil. Turn heat off once green beans are warm.
Tips:
- Oil – You can use olive or canola oil, either works.
- Soy sauce – Add soy sauce to taste as you toss the beans in the oil if you’d like!
