The other night I was putting a few things away as my husband and I were getting ready for bed. Just as he was getting out of his chair, it hit me… I completely forgot to tell him earlier in the night that I needed gas in my car.
So, as all of us do when we want something, I laid it on reeeeeal thick. Then I said, “Do you love me?” He responded with, “Of course.” Then I stepped up my game with, “Do you really, really love me?” He said, “Yes, I really, really love you.” Then I reminded him one more time with, “You love me a whooooole lot?” He was on to me and asked, “What do you want?” HA!

Then I told him, with a great big ‘ole smile! I got the look. Instead of saying what he was really thinking, he held back most of it and said, “Alright, I’ll go fill up your car.” So off he went, at 9 o’clock at night, in his pj’s to fill up my car so I didn’t have to do it in the morning!
Now, THAT is true love.

This Cheesy Hash Brown Casserole is one of my favorite go-to recipes! Why?
- They are super quick AND easy to make. It takes 5 minutes, yes 5 MINUTES, to put this casserole together. Yet, it looks like it required effort so you feel like Betty Crocker when they come out of the oven!
- Everyone loves them! If you need a last minute meal for your family or a dish to take to a potluck – these cheesy hash browns are your solution!
- They reheat really well. It’s as if you are eating them fresh out of the oven after you reheat them in the microwave!
- Sometimes cheesy hash browns can be greasy. I don’t like that, I like them to be creamy and more casserole-like instead of soupy!
- Did I mention they are quick AND easy to make? Good. Just wanted to make sure!

Ingredients for Cheesy Hash Brown Casserole
- Hash Browns (Southern or Shredded)
- Cheddar Cheese Soup
- Potato Soup
- Sour Cream
- Dried Minced Onion
How to Make a Cheesy Hash Brown Casserole
- Preheat oven to 350 degrees and spray 9 x 13 glass pan with non-stick spray.
- Combine 1 bag (26 oz) of shredded hash browns, 1 can of cheddar cheese soup, 1 can of potato soup, 1 (8 oz) container of sour cream, and 1/4 cup dried minced onions in a large bowl.
- Mix ingredients together until well combined. Spread evenly into sprayed pan.
- Bake for 1 hour.

Tips for Making & Storing Cheesy Hash Brown Casserole
- Just use dried minced onion, the kind you find in the baking aisle with the spices. Easy. Peasy.
- You can use either Southern (cubed) or shredded hash browns for this recipe. The whole bag (about 26 oz) of either one works just the same!
- These can be made ahead and reheated. They are also great for leftovers!
- You can keep cheesy hash browns fresh in the refrigerator up to a week.

I’ve made this recipe so many times I have it memorized. I love recipes that are short, I can remember them easier! The best part is I don’t have to check the recipe first when I am making my grocery list!
