When my son was 8 years old I felt he was ready for more responsibility. I decided he should start checking in for his appointments, using the kitchen more independently, asking someone where something is in the store, packing groceries, checking out, ordering his own food, answering questions on his own at appointments, picking out his clothes at the store, etc.
I stood back and encouraged him to do all of these things scared. He is naturally shy, so he was nervous and not confident. Now that he is older, I watch him do all of those things with confidence even if he didn’t do them perfectly to begin with!
I am a firm believer in building confidence with imperfect experience. Someday my son is going to be faced with choices that could lead to big trouble if he doesn’t choose wisely. He is more likely to say no to peer pressure if he feels confident, so I am determined to help build him up to be firm in what he believes.

What You’ll Need:
- 1 (16 oz) package Mint Oreos
- 4 tbsp Butter, Melted
- 3 (8 oz) Cream Cheese, Softened
- 3/4 cup Sugar
- 3/4 cup Sour Cream
- 1 tsp Vanilla
- 1 tsp Mint Extract
- 3 Eggs
- Green Food Coloring

How to Make Mint Oreo Cheesecake Bars
- Preheat oven to 325 degrees. Spray 9 x 13 pan with non-stick spray.
- Place 28 Mint Oreos into a food processor and pulse into crumbs. Add in 4 tbsp melted butter until crust forms. Press firmly and evenly into the bottom of the pan.
- In a large bowl, beat together 3 (8 oz) softened cream cheese and 3/4 cup sugar until smooth. Add in 3/4 cup sour cream, 1 tsp vanilla, and 1 tsp mint extract.
- Then beat in 3 eggs, one at a time, beating between each egg. Add green food coloring until desired shade of green is reached.
- Pulse remaining Mint Oreos into large chunks. Reserve some to garnish with and gently stir remaining pieces into the cheesecake batter.
- Spread cheesecake mixture over the crust evenly. Sprinkle reserved cookie pieces into the top.
- Bake for 40 minutes.
- Refrigerate until cool and firm before serving.
