Vegan Nutty Chicken Salad Recipe
When I first started the blog, I shared a lot of vegan recipes. But over time, I realized that wasn’t what a majority of my readers were looking for so I pivoted and started sharing more vegetarian recipes.
There are still people who support my blog who appreciate the vegan recipes, so I am sharing this Vegan Nutty Chicken Salad for them!

What You’ll Need:
- 1/2 cup Slivered Almonds
- 1 (15 oz) can Chickpeas, Drained & Rinsed
- 2 Celery Stalks, Diced Small
- 1/2 cup Red Grapes, Halved
- 1/4 cup Dried Cherries
- 1/2 – 3/4 cup Vegan Mayonnaise
- 1 tbsp Lemon Juice
- Salt to Taste

How to Make Vegan Nutty Chicken Salad
- In a food processor, pulse 1/2 cup slivered almonds until crumbly. Make sure not to pulse too fine.
- Add in 1 (15 oz) can drained and rinsed chickpeas and pulse just a few times. You can leave a few beans whole, you don’t want to over pulse.
- Transfer the mixture to a bowl and mix in 2 diced celery stalks, 1/2 cup halved red grapes, 1/4 cup dried cherries, 1/2 cup vegan mayonnaise, and 1 tbsp lemon juice. Mix until well combined. Add more mayo to reach desired consistency and salt to taste.
- Refrigerate until ready to serve.
