A healthy freezer friendly breakfast to go for the whole family! This recipe works great for meal prepping!
I like to prank my husband. Notice I didn’t say ‘successfully’ prank my husband! HA! One time I was carrying a basket of laundry down the stairs when I heard the garage door open. My husband was just getting home from work and on a whim I thought it would be funny to make it look like I fell down the stairs. In a dramatic way of course.
So I laid at the bottom of the stairs in the most uncomfortable way, and threw laundry all over myself and down the stairs. I put the final touches by closing my eyes and hanging my tongue out.
When he walked in the door he chuckled. And then set his lunch box down and started taking off his shoes. My prank failed! I started dying of laughter and then told him, “I could have been dead at the bottom of the stairs and you chuckled!” He said, ‘But you’re not dead; and you look ridiculous.’ Ugh!
Another time I thought I could fool him with fake poo. So I strategically put the poo on the floor. My husband noticed the poo, chuckled, and walked around it. Another fail! Why? Well who exactly would have pooped on the floor?! We didn’t have any pets or children at the time, so that means it would have been me! And he knew I didn’t poop on the floor!
Now we have a child, and he and my husband find it hilarious to prank each other with that same fake poo. They hide it in each others pillows, shoes, dressers, beds… it’s great fun for them!
Meanwhile, I just stick to baking because clearly my pranks don’t work! I decided to turn Easy Chocolate Chip Oatmeal Breakfast Squares into Chocolate Chip Oatmeal Breakfast Cups.
Ingredients for Chocolate Chip Oatmeal Breakfast Cups
- Rolled Oats
- Unsweetened Applesauce (Or Mashed Banana)
- Water
- Salt
- Vegan Mini-Chocolate Chips
- Peanut Butter
- Maple Syrup
- Vanilla Extract
How to Make Chocolate Chip Oatmeal Breakfast Cups
- Preheat the oven to 350 degrees. Line muffin pans with liners and spray the liners with non-stick spray.
- In a large bowl, combine all of the ingredients: 4 cups rolled oats, 2 2/3 cup unsweetened applesauce (or mashed banana), 3/4 cup water, 1 tsp salt, 1 cup vegan mini-chocolate chips, 1/3 cup creamy peanut butter, 1/2 cup maple syrup, and 2 tsp vanilla extract.
- Mix all of the ingredients together until well combined.
- Divide evenly between cups. Sprinkle additional chocolate chips on the top if you’d like.
- Bake for 28 minutes, but do not open the door when the timer goes off. Just turn the oven off and set the timer for 20 minutes. When the time is up, remove the pans from the oven.
- Let cool and remove from muffin pans.
Tips for Making Chocolate Chip Oatmeal Breakfast Cups
- You can use 2 2/3 cup mashed banana instead of unsweetened applesauce. NOTE: Your cups will take on the taste of the applesauce if you use cinnamon flavored applesauce.
- If you don’t want to use peanut butter, you can use a different nut butter or oil.
- You can use honey instead of maple syrup. NOTE: If you substitute honey for the maple syrup, these Chocolate Chip Oatmeal Breakfast Cups will not be considered vegan.
- It is best to use 2 muffin pans and place in the oven at the same time. This is best because you have to turn the oven off after baking for 28 minutes and leave in the oven for an additional 20 minutes. It’s best to bake the batter all at once so you don’t have to turn the oven bake on and wait for it to reheat before baking another batch.
Can You Freeze Chocolate Chip Oatmeal Breakfast Cups?
- These cups can be easily stored in a container in the refrigerator for up to a week. They are also freezer friendly! Seal the cups into a freezer bag and they’ll keep in the freezer for up to 3 months.
