Easy Snickerdoodle Cobbler Recipe
I am currently sitting on top of a huge pile of recipes I am wanting to share with you! I can’t seem to get past major writers block – every time I sit down to share a recipe I just stare at the screen, hoping something will come to me that is relatable.
There are days I have so much to say I can’t get it out fast enough! And other days I just draw a blank.
I guess we will just have to focus on the caramel oozing from this Snickerdoodle Cobbler for now! If you love cobbler, I think you’ll enjoy Pumpkin Pecan Cobbler, Cinnamon Roll Peach Cobbler, and Peach Cobbler, too!

What You’ll Need:
- 1 (17.5 oz) pouch Snickerdoodle Cookie Mix
- 1/2 tsp Apple Pie Spice
- 1/2 cup Butter, Softened
- 1 Egg
- 1 tsp Vanilla
- 1 (21 oz) can Apple Pie Filling
- 1/4 cup Caramel Sauce

How to Make Snickerdoodle Cobbler
- Preheat oven to 375 degrees and spray 8 x 8 pan with non-stick spray.
- Remove the cinnamon sugar packet from the cookie mix pouch and pour into a small bowl. Add 1/2 tsp apple pie spice and whisk to combine. Reserve 2 tbsp of the sugar and spice mixture.
- In a large bowl, mix together 1 (17.5 oz) pouch Snickerdoodle cookie mix, remaining cinnamon sugar & spice mixture (not the 2 tbsp), 1/2 cup softened butter, 1 egg, and 1 tsp vanilla until well combined.
- Press half the dough into an even layer on the bottom of the prepared pan.
- Spread 1 (21 oz) can apple pie filling over the crust evenly.
- Drop small spoonful’s of remaining dough across the top of the apple pie filling.
- Sprinkle reserved 2 tbsp cinnamon sugar and spice over the cobbler.
- Bake for 45-50 minutes. Lightly tent the cobbler with a piece of aluminum foil at the 30-minute mark to keep it from getting too dark.
- Let cobbler cool for 10 minutes. Then drizzle 1/4 cup caramel sauce over the top.
