Easy Grinch Mini Cheesecake Recipe
My husband is a huge Packers fan! I am a fan, but I don’t have time to watch all of the games. I basically ‘watch’ the games by listening to all of the commentary coming from him!
He recently got a Packers Fan Club sign to hang in our basement. He wanted to make sure I liked it before he got it, so as he was showing it to me I had a vision of what I wanted to do with it right away. As we prepared to hang his new sign, I started cleaning and purging some of the Packer clutter he’s collected. At one point he said he couldn’t watch, but I needed him to nail it to the wall so he couldn’t escape!
As I was moving stuff around and getting rid of stuff it became quite the project he didn’t see coming. So he said to me, “All of this because I got a sign.” It was hilarious! I couldn’t stop laughing!

What You’ll Need for the Crust:
- 1 cup Oreo Crumbs
- 2 1/2 tbsp Butter, Melted
The Cheesecake Filling:
- 2 (8 oz) Cream Cheese, Softened
- 1/2 cup Sugar
- 2 Eggs
- 1 tsp Vanilla
- Neon Green Food Coloring
How to Make Grinch Mini Cheesecakes
- Preheat oven to 350 degrees. Line a cupcake pan with liners.
- Pulse about 10-11 Oreos in a food processor to make 1 cup crumbs. Then pulse in 2 1/2 tbsp melted butter until well combined.
- Divide crumbs evenly between each liner and press down firmly.
- In a medium size bowl, beat 2 (8 oz) softened cream cheese and 1/2 cup sugar until smooth. Beat in 2 eggs and 1 tsp vanilla.
- Mix in neon green food coloring until desired Grinchy color is reached.
- Spoon about 1/4 cup mixture into each cup, filling them evenly.
- Bake for 15-17 minutes. The centers of the cheesecakes should be slightly jiggly. Remove from oven and let completely cool in the pan. Then refrigerate until firm.
- Top with whipped cream and sprinkles if desired.
