Easy Grinch Mini Cheesecake Recipe!
My husband is a huge Packers fan! I am a fan, but I don’t have time to watch all of the games. I basically ‘watch’ the games by listening to all of the commentary coming from him!
He recently got a Packers Fan Club sign to hang in our basement. He wanted to make sure I liked it before he got it, so as he was showing it to me I had a vision of what I wanted to do with it right away. As we prepared to hang his new sign, I started cleaning and purging some of the Packer clutter he’s collected. At one point he said he couldn’t watch, but I needed him to nail it to the wall so he had to watch!
As I was moving stuff around and getting rid of stuff it became quite the project he didn’t see coming. So he said to me, “All of this because I got a sign.” It was hilarious! I couldn’t stop laughing!
If you need a good light hearted and fun dessert to bring to your holiday party, take these Grinch Mini Cheesecakes! All of the Who’s at the party will love them, especially the kids!
Why this Recipe Works:
- Fun Visual Appeal – The neon green coloring transforms a classic cheesecake into a festive Grinch-themed treat, making it perfect for holiday gatherings.
- Easy and Beginner Friendly – Simple ingredients and a straightforward mixing process means consistent results, even if you are new to baking.
- Built for Decorating – The smooth, firm top makes it easy to add the whipped cream and red heart sprinkles, bringing the Grinch theme to life!
Ingredients You’ll Need for the Crust:
- 1 cup Oreo Crumbs – Adds a rich, chocolatey base that pairs perfectly with the creamy filling.
- 2 1/2 tbsp Butter (Melted) – Helps bind the crumbs together to form a firm crust.
And the Cheesecake Filling:
- 2 (8 oz) Cream Cheese (Softened) – The base of the cheesecake, giving it a smooth, creamy texture.
- 1/2 cup Sugar – Adds sweetness and balances the tang of the cream cheese.
- 2 Eggs – Provides structure and helps the cheesecake set properly.
- 1 tsp Vanilla – Enhances flavor with a warm, sweet note.
- Neon Green Food Coloring – Gives the cheesecakes their signature Grinch-inspired look.
How to Make Grinch Mini Cheesecakes
- Preheat oven to 350 degrees. Line a cupcake pan with liners.
- Pulse about 10-11 Oreos in a food processor to make 1 cup crumbs. Then pulse in 2 1/2 tbsp melted butter until well combined.
- Divide crumbs evenly between each liner and press down firmly.
- In a medium size bowl, beat 2 (8 oz) softened cream cheese and 1/2 cup sugar until smooth. Beat in 2 eggs and 1 tsp vanilla.
- Mix in neon green food coloring until desired Grinchy color is reached.
- Spoon about 1/4 cup mixture into each cup, filling them evenly.
- Bake for 15-17 minutes. The centers of the cheesecakes should be slightly jiggly. Remove from oven and let completely cool in the pan. Then refrigerate until firm.
- Top with whipped cream and sprinkles if desired.
My Best Tips:
- Press the Crust Firmly – Pack the Oreo crust down well so it holds together when serving. Use the back of a spoon or small glass.
- Must Use Neon Green Food Coloring – Start with a small amount and build up. Neon green can get intense quickly – aim for a bright, but not overpowering shade. (Do not use traditional green, you will not get the desired ‘Grinch’ green.)
- Don’t Overbake – The centers should still have a slight jiggle when you take them out. Overbaking leads to dry or cracked cheesecakes.
- Add Garnish Right Before Serving – I like to top with whipped cream and heart sprinkles right before serving for the best look!

I was also curious about how many cheesecakes this is supposed to make?
Hello! I’m excited to try this and just got home with my ingredients and you didn’t specify how many cakes this makes or how much of the crust to put in each one, that would certainly make it easier on me lol. You might wanna add that in but they are very cute and hopefully they will turn out well.
