Rhubarb Cake with Icing
I have always just used regular vanilla when I bake. But my parents frequent a discount Amish store and they found a big bottle of Mexican vanilla for me. I didn’t know this, but Mexican vanilla doesn’t have alcohol as an ingredient. I also didn’t know that regular vanilla has alcohol!
When I opened the vanilla they got me I was overcome with the smell of REAL vanilla! I was shocked by how fragrant it was! I called a friend of mine right away to ask if she knew of this phenomenon and she’s been using it for years already. How am I just now finding out about this?!
If you aren’t using Mexican vanilla, I highly recommend switching! It is a game changer for flavor!

What You’ll Need for the Cake:
- 1 Egg
- 1 cup Sugar
- 1 cup Sour Cream
- 1/4 tsp Salt
- 1 3/4 cup Flour
- 1 tsp Baking Soda
- 1 tsp Vanilla
- 2 cups Rhubarb, Chopped
- 1/2 cup Walnuts
- 1/2 cup Brown Sugar
And the Icing:
- 1 cup Powdered Sugar
- 1 tsp Vanilla
- 1 tsp Milk

How to Make Rhubarb Cake
- Preheat oven to 350 degrees. Spray 9 x 13 pan and set aside.
- Chop enough rhubarb to make 2 cups and set aside.
- In a medium size bowl, cream together 1 egg, 1 cup sugar, and 1 cup sour cream.
- In a separate small bowl, mix together 1 3/4 cup flour, 1/4 tsp salt, 1 tsp baking soda.
- Pour dry ingredients into the wet and combine well. Add chopped rhubarb to the batter and mix.
- Pour into the prepared pan and spread evenly.
- Sprinkle 1/2 cup chopped walnuts and 1/2 cup brown sugar over the batter evenly.
- Bake for 35 minutes.
- Make icing by combining 1 cup powdered sugar, 1 tsp vanilla, 1 tbsp milk then drizzle over the cake.
