Gooey Monster Cookies
These cookies are loads of fun to make with your kids in the kitchen. There is no right or wrong way to make them look like monsters so your kids will have a blast putting the eyes in the cookies however they’d like!
These Monster Eye Cookies were made with my niece and nephew in mind. They live close enough to make a day trip to see them, but not close enough to just drop by. So we are shipping them a fun care package with these adorable edible monsters for Halloween! My nephew is also my son’s very best friend. Watching them is like a flashback of my sister and I – except the boy version. We miss them, so we are sending them some love!

What You’ll Need:
- 1/2 cup Butter, Softened
- 8 oz Cream Cheese, Softened
- 1 Egg
- 1/2 tsp Vanilla
- 1 box White Cake Mix
- Neon Food Coloring
- Powdered Sugar
- Candy Eyes
How to Make Monster Eye Cookies
- Beat 1/2 cup softened butter, 8 oz softened cream cheese, 1 egg, and 1/2 tsp vanilla until smooth. Mix in 1 box White Cake mix and beat until well combined and smooth.
- Divide batter into separate bowls for the amount of colors you want. (Example: 1 bowl for blue, 1 bowl for green, etc.)
- Add neon food coloring to each individual bowl and mix until combined.
- Chill dough for 30 minutes.
- While the cookie dough is chilling, preheat oven to 350 degrees.
- Line baking sheet with parchment paper and set aside.
- When ready, roll balls of cookie dough into a bowl of powdered sugar and place onto prepared baking sheet. Lightly pat down the balls of dough.
- Bake for 10-12 minutes.
- Add candy eyes as soon as you remove from the oven, while the cookies are still warm.
Recipe Notes:
- Glass cup – I use the bottom of a glass cup to lightly pat down the cookies right before putting them in the oven.
- Coloring – You don’t need to perfectly measure the cookie dough to disperse into the separate bowls for coloring. Just ‘eyeball’ it!
